Can you make a good roux for gumbo with gluten free flour? If so, which flour. Gumbo has been a Christmas tradition and now my father has been diagnosed with Celiac. Many thanks!! |

Oh, my! rice flour is used to thicken many commercial products in place of wheat flour, but I have not made a roux with it. However, in your cicumstance, that is what I would use. If you dont have a health food store, powder white rice (not the converted Uncle Ben's kiind, just plain white rice) 1/24 cup at a time in a good blender. Let us know how itr turns out. |
