Rice for a crowd

06/22/10 		I'm cooking rice at a 4th of July event in our community and will be using a camp chef propane stove to cook the rice in large stock pots. How many serving of rice can I cook at a time and be successful? Can I hold the rice at a safe temperature in roaster ovens without burning it or scorching it?

06/22/10 		Yes on the hold, at temp 180, covered. You are much less likely to scorch the rice if you actually cook it in the roasters; large pots of rice over propane are almost an invitation to scorch, not to mention that it takes about 20 minutes per gallon to bring the water to a boil.
