Use the plan for 100 page, make 1 1/2 times the amounts. Allow 1/2 pound raw brisket per person PLUS 1 pound sausage for each 4-5 people |

Cooking for a church fundraiser about 250 take-out. Making chili verde , Spanish rice and beans. Using cushion pork. How many pounds of pork do I need? What are the serving portions per item? I don't want to under serve people or over serve? Thank you! |

Allow 1 pound raw boneless pork for 3 good servings. Around here we serve it in a bowl (8 ounce) with the rice and beans on the side; about 3/4 cup each rice and beans for generous portions. |
