How can I preserve my soymilk product for upto 90 days.Is there any additives (preservatives) I can use.

No way that I know of. You can freeze it, but the texture does alter somewhat- OK for cooking, not so smooth for drinking. It is so easy to make with the newer machines such as the soyapower and soyajoy, what it the purpose of teying to preserve it that long?

I want to preserve it for commercial purpose.most people in my country Ghana do not have refrige to store the soy milk.please do you know how I can keep for long?I do bottle the soymilk.

Commercially, you can sterilize and package in "tetrapacks" aseptic packaging, but this requires machine processing, it can't be done by hand. The milk is sterilzed and packed into sterile containers and sealed without every being touched or recontaminated by hand touch. It does not have to be refirgerated and lasts several months. Hope it works. If you packaged in pint (500 ml) containers, that can be used for 24 hours before it spoils.

Hi, I got a SoyaPower soymilk maker for $119. It comes with a 12-page recipe book. I like the soy-oat milk I made (I have not tried other recipes). It tastes great, as good as the packaged soymilk I have been drinking (I had expected to have to get to used to it). The machine is so easy to use! I am quite amazed at how this whole thing is automated. I am glad I bought the SoyaPower though it is more expensive. Thanks for recommending the machine.

it is a good machine. My personal favorite is the newest model Soyajoy, but both will give good results.

Yes, there is A WAY to preserve soy milk for 90 days in any quantity... You should add the content of 3 capsules of Lecithin-1,200 IU for every gallon of soy milk, and 2 teaspoons of citric acid in powder form (you can find it in the internet). Also keep it in the refrigerator at 50 degrees and it will help to slow down the fermentation process. Besides, DO NOT STORE IT in a plastic container but in a stainless steel one or in a glass container. Good luck!

I DO NOT recommend storing hamemade soymilk without freezing for more than 7 days, no matter what is added. Also you need to scald/ boil/ sterilze all you strainers, utensils and containers if you want it to last that long (which is why plastic doesn't work). In Japan, pre refrigeration, is was made freah daily and so was tofu, not stored.

There are two problems" the growth of bacteria and yeasts, and the breakdown of proteins and fats into toxic products.

It would not be advisable to store hanmade soy milk for so long, as you said, but citric acid, added proportionally, will keep an acidic environment wich, in one hand, will accelerate the fermentation process, but will halt the growth of fungus and bacterias. However, lecithin will counteract the effect of fast oxidation, specially if it is refrigerated. Some chefs even use Caprylic acid to prevent de outgrowth of fungus. I have tried it, and it works. But it will not be nutritionally worth!

Heating and hot filling is like pastuerizig, not like sterilizing, and wou;ld not keep for 5 months. Please address questipns about long term or commercail production to Dr. Karl Weingarten at the University of Illinois, he has done a LOT of work on this, and I have not:

You said you like the SoyaJoy over the SoyaPower. Could you give me a reason for it. I need to buy a soy milk maker and I need to decide which one to buy. In the company's website it sounded like the SoyaPower was an improvement over the SoyaJoy that is why I was leaning towards the SoyaPower but after reading what you wrote,I am a little confused.

Homemade soy milk is safe and drinkable for up to a week if it is rapidly chilled and KEPT BELOW 40 degrees. This means don't keep taking the container out and setting it at the table. I don't recommend 10 days, unless you want to freeze it and cook with it.
Unrefrigerated, it is only good for 24 hours.

Why do you like SoyaJoy more than SoyaPower? A question which has been raised several times, but remains unanswered. I'm also looking for a soymilk maker. Please give us your reply as early as possible.

Dear Carrie and others,

As I said the very first time this question was asked, both are good machines; I just personally prefer the newest Soyajoy. I have had good results with the milk, find the machine is easy to clean, can make double strength milk by starting with beans and milk instead of beans and water, and the machine does not scorch soy or blend milks. I like the bigger bean basket, too. I have also been very satisfied with the customer service. The advantage of a private site like ellenskitchen.com is I get to state my private preferences.
