This requires about 100 staff... It is WAY outside amateur practice. You need multiple main stations (about 1 for every 100 guests) pus specialty stations for carved items, etc, plus people circulating with trays. Your menu depends on your budget and kitchen/ ovens, how long the party is, etc. Take a look at chef2chef.com and cheftalk.com Usually the fee for hos deouvres partys is about $1 per "bite or item" And you have at least 8-12 items. |
