Phyllo/filo is a paper-thin pastry dough used in layers to make crusts for Mediterranean desserts and entrees. It is VERY VERY difficult to make because the dough is literally stretched so thin you can read large print through it. Greek grandmothers can get the right flour and have the hand skills; I don't, I have tried, and I am a very good baker. So I don't post a recipe.

OK, here is a sub for true filo/phyllo that you can try at home. I cannot post links on the bulletin board, thanks to the spammers, so you have to change the stars to slashes to use this URL, OK?

Can I refreeze phyllo dough?

It is not unsafe, but loses quality pretty badly. It is not very expensive where I live, so I suggest you start fresh-

It is in the freezer department with the unusual bread doughs and other odd frozen things, such as Chinese dumplings. Good luck.

My family is allergic to gluten. There are so many substitutes now for gluten free living, but I haven't found one for phyllo dough. Do you know of one? Thanks!

Unfortunately, the thinness of the filo depends on the gluten The possible substitute for some dishes would be gluten-free crepes, but even this would nut be close.

Rice flour could be a good substitute.

Mix it with water to form a viscous liquid. Spread a this layer of oil on a flat frying pan and spread a thin layer of the rice flour on the frying pan.

Once the whole thing has "melded", you can take if off as a paper-thin layer

This will be possible, not as crispy...
