I would like to make your freezable mashed potatoes for 100 people. Here is my question: I need to reheat and serve them from my 18 qt roaster ovens. How would you do this? And should I add extra butter and milk or cream to them after they're hot to make them creamier? |

Usually with frozen, you have to stir in some water from the top, so don't add other liquid until they are hot and stirred. Thaw them in the refrigerator before reheating. You could do this in 2 ovens, or three. Pam the roaster pan. Preheat at least 20 minutes. Stir occasionally while heating, and allow at least an hour. Turn to 180 when middle is at least 165. |

Thank you. What if I made them on Wednesday and just kept them refrigerated until the dinner on Friday evening? Would that be safe? Your site is a big help, by the way. |
