how much of each meat should i purchase

If it is self serve, you have to have enough for everyone to get their first choice, so you will have some leftovers.

I would calculate 1 piece of chicken PLUS 1/2 cup each barbacoa and chile verde for each person

beans 8 pounds dry per 100
rice 6 pounds dry per 100 because of the potato salad
potato salad 4 1/2 gallons per 100 (35 pounds of potatoes)
cabbage salad 20 pounds cabbage per 100
rolls 2 per person unless very large
