I'm a little confused with the charts and exact cooking temp for top round roast. So if you could just break down the best cooking option when cooking a top round roast in a convection oven not coventional. I want the roast medium rare with a nice brown carmalized outside. With a weight of 12-15lbs. Thanks. |

There are 2 listings for top round, larger (15 pounds) and smaller (10 pounds) in the middle of the chart. The smaller roast is about 18 minutes at 300, the larger is about 15 minutes per pound at the same temp. Preheat the oven. Use a meat thermometer, take it out 5 degrees below the temp you want, let it stand 20-30 minutes before slicing. |
