Planning a pasta buffet for my organization - we expect about 40 people - I'm doing the cooking. Have figured (all 1/2 pans for steam racks) 3 trays baked ziti, 2 jumbo stuffed shells per person + extras, 2 trays linguine w/clam sauce, 2 trays fettuccine alfredo, 3 trays gemelli w/peas and chicken and 2 meatballs per person + extras. Also serving salad, bread, coffee and dessert. Does that sound like enough/too much food?? Also, how big should the meatballs be - was figuring 3 oz. raw weight. |

Yes, it is probably too much food. For 40 people, you need no more than 10 pounds dry pasta besides the shells, and with that you will probably have some left over. Nice menu, though. The meatballs, I would make 4 smaller instead of 2 larger. |
