bread Pudding

11/01/10 		I need to make bread pudding for 60 people. I can convert ther recipe. But I am stumped on cooking time. I am using and industrial oven with the large industrial baking dishes 3x18x28.

Help!

11/01/10 		Add about 20 minutes per inch of depth greater than the original recipe, if it is not coming out of the refrigerator to bake. 1/2 hour per inch if it is coming out of the refrigerator. Check with an instant reed thermometer in the middle of the pan (don't touch the bottom of the pan); should be 155 when removed from the oven.
