Hi,
I live in the Netherlands and I need to know what a cake of yeast is equivilant to. How ,any grams or ounces it is because I am using fresh yeast.

1 cake of yeast is 2 1/2 teaspoons (1 package) of dried/ instant yeast, it is tougher to estimate with fresh liqid yeast such as sourdough, but it is between 1/4 and 1/2 cup.

Hi Ellen !! This is my first time to your wonderfully informative site!!! How can I make my own yeast(for bread), and/or starter using simple ingredients like my great,great grandmother may have used.And/or that they used in ancient times..say, in the mid east around 2,000 yrs ago. I've read in the Bible they enjoyed both leavened and unleavened bread. I want to try making my own everything from scratch..Can you help me??

my son has got to go on a glutenfree diet and some papers say i can use yeast and others say i can`t can you help??? also i am looking for recipies aswell many thanks

There are wonderful books on home-started leavens, besides sourdough. You can also start with one pack of store bought and make yourself a months worth of liquid yeast. Keep in mind that home yeasts are SLOWER than commercial, and may also have somewhat more TEMPERAMENT, which means they may not rise as high. Experiment. Let us know. Lucky for you, the best glutenfree baking book I have eveer seen is just published. By Betty Hagman, the guru of glutenfree cooking, it uses sorghum flour and other wheat-free blends. IT is ABSOLUTELY worth it to get the book and the ingredients.

Whether yeast is glutenfree depends on whether it has any flour mixed in, such as cake yeast or regular sourdough. Read all about it in the Hagman book.

It will make all the difference in the world if you can really stick to the glutenfree regimen, Good luck.
