I am doing a halibut dish using cannellini beans from the raw state for 140 people. The sauce has the beans in it with swiss chard- so it is not all beans- but I am not sure how many beans I should start from raw. Have any idea anyone? Does anyone know a raw bean to cooked bean ratio web site for large groups? thanks ahead of time. E. |

Cannellini beans make about 7 cups from 1 pound, there are variations per pound- smallest, such as lentils, about 6 cups, very large like fava and large lima, about 8. 8 pounds per 100 is a good estimate for bean side dishes, even with the chard added. |
