Leg of Lamb

Hello Ellen! My brother requested that I prepare a Leg of Lamb for a family gathering. I want to use my 18 quart roaster oven. I ordered the lamb from my butcher and he is going to de-bone it and then wrap the meat around the bone to enhance the flavor, the lamb roast is apprx. 6lbs. We will be serving leftover turkey for those who do not care for lamb.

Can you tell me how to roast the lamb in my Rival roaster and also can I place potatoes around it to roast also.

Handle this just as you would in your regular oven for temperature. Be SURE to preheat the roaster covered for at least 20 minutes before you put the meat in. Use an instant read thermometer to check the meat temp starting about 20 minutes before it "ought" to be done. The potatoes go around just as they would in the regular oven.

The main difference is, it cooke\s moister and you won't get the crispness on the outside you get with a conventional oven.

Nice butcher! If you can, take him some long sprigd of fresh rosemary and some garlic cloves to wrap along the bone.
