All my tender cakes - chocolate & coffee cakes are shrinking to 1/2 the baked size! I've checked all the usual - size of pans, expiration dates of ingredients etc. All pans well greased. Please help - you wouldn't want to eat one - they look flat! I'm now desperate. |

First, using a separate thermometer, check your oven temp, it is probably higher than you think. Reduce 25 degrees at a time until you see improvemnet. If you have switched to a convection oven, it uses less time and lower temps. Also, don't overbeat the egg whites. Just until soft peaks or stiff as called for- overbeaten whites collapse. |
