Feeding 100-120 persons

I am coordinating a dinner for a group of 100-120 people that is donation based. I wanted to confirm quantities for serving 100-120 people before I post my sign up sheet. Our menu is boneless ham, canned yams, tossed salad, dinner rolls, and dessert (undetermined). I've estimated we need three 10 lb. boneless spiral hams, sixteen cans of yams (29 oz), three 5 lb. bags of salad mix, and six dozen medium soft dinner rolls. Do these quantities sound reasonable/generous? Any suggestions for dessert quantity? Thank you

Candace, I need to know if it is buffet or plated and served; it is light for buffet, and a little light for plated.

Also, are people bringing these items, or are you purchasing them? Are they bringing other things?

We will be serving buffet style. I am asking people to bring in the donated food items.
This is my first time planning a meal of this size, are there any quantities listed above that I should increase based on your experience? Thank you

OK, for 120 people buffet style, this is what I would ask for:

three 10 lb. boneless spiral hams, I would do 40 pounds, 10 people bring 4 pounds
sixteen cans of yams (29 oz), need 35 pounds, about 12 9x13 casseroles
three 5 lb. bags of salad mix, see plan for 100 list. Allow salad or slaw, people to bring dressing if they bring green salad.
six dozen medium soft dinner rolls-allow 1.2 per person, 10-12 dozen, 12 pounds per 100 PLUS 3 pounds butter per 100 (1 stick per dozen)
You need a vegetable- 12-15 9x13 dishes

Desserts- 10-12 2 layer cakes or 9x13 pans
