I am planning a wedding for 67 adults/teens and 11 10 and under children. This will be a self serve buffet at 6:30pm. Looking at your tablesm this is what I came up with but I still am not sure of quantities-
Lettuce for salad or sandwiches 4 large bags spring mix (?)
Drinks- Iced Tea |

OOPS! Above got sent before I was done. Does this menu sound about right? Should we also have a fruit salad? Do you have a good recipe for the marinated mushrooms and mozzarello/tomato salad? We wont have much help on wedding day itself so that is why a menu like this.... Thanks you so much for any and all suggestions!! |

This is a nice size party for not much help. Since this is the supper-time menu, you are a little light on some items, and you do need to plan a nibble table for the time while pictures are being taken after the wedding.

Meat Tray turkey, roast beef, ham 18lbs- I would do 21-22 Assorted Rolls 90 OK if the large size, but because of the number of small children, consider doing the smaller ones and doing 150.
Mayo
Potato Salad 3 1/2 gallons
carrots 2 lb mini carrots- about 4 pounds Consider doing 1 electric roaster full (3 -4 gallons) of scalloped potatoes, hash brown casserole, etc. instead of the potato salad. For the nibble table, fruit tray (not salad), see the fruit tray page, can be done day before. Crackers and a hot dip- 2 6 quart crocks of spinach artichoke, for example, or maybe one queso. One other item. A punch, about 4 gallons. For the table beverages, skip the soda unless you have a LOT of teens. Iced tea, coffee, and maybe a kid juice. |

Thank you so very much! Potato salad is going to have to stay. That was Dtrs only request. This is a restaurant recipe made with very little mayo. I like the idea of the nibble table. I will cont to tweak this, esp closer to wedding (May)and have better number of who is coming or not. Hopefully, we can pull all this off as it will be held at the house and pray for no rain! |
