I am wondering if it is possible to use tapioca as a base for a chewy candy. I have seen tapioca as an ingredient in ginger candy and would like to make some chewy ginger candy using agave instead of sugar. Any suggestions? Thanks. |

Tapioca flour is what is used in the ginger candy, but the chewiness comes from the sugar and maltose. I don't know if agave will thicken up on heating as sugar syrup does, and that would be critical for chewy candy. |
