how much salsa - used as a condiment

I make the best salsa here in KC. My son's school fund raiser is having a mexican dinner.
The salsa will be used as a condiment. The dish will consist of a tamale, rice, beans, and a taco salad. So can you please advise.

03/10/05 		basic- 2 tablespoons per person= 400 tablespoons=25 cups= 6+ quarts. 2 gallons should be OK if the salsa is not used as a dressing for the taco salad.
