luncheon for 55 people

I am thrilled to have come across this site. I am having a birthday luncheon which will be part catered and some fill-ins.

for the main dish our caterer is providing the following dishes: shrimp with garlic, tortellini in 4 cheese sauce

for appetizers: caterer providing crab dip with veggies and crackers and mazzerella (sp?) caprese

i am supplementing main dishes with grilled veggies, salad and grilled tuna

i am supplementing appetizers with baked brie

and fruit and cake for dessert

i am not concerned about the portions the caterer will prepare but i have no idea how much salad, fruit and grilled veggies to make. any suggestions would be very much welcome (and i am concerned about whether the dishes complement each other and whether i have enough. thanks for any input you might have

Interesting question.

I would grill 10 pounds of tuna, 3 ounce pieces.

salad, 1/2 the amount on plan for 100
fruit tray (I would probably put this with the appetizers not the desserts)
grilled veggies-about 12 popunds ready to eat

brie- 3 wheels
