I am making a brunch for 30 ppl. I am planning on making muffin-sized individual quiches. I plan on making them the night before, slightly undercooked, and then completing the baking the morning of the event. Question-after i bake them, can i transfer them to the chafing dishes, cover, travel to the location, and keep them in the chafing dishes throughout the brunch, to keep the quiches warm, or will they burn on the bottom (or even dry out) if kept over a flame? If so, what other ways can I keep these warm? |

Not safe to partially cook egg dishes. Cook morning of, or use an impossible pie recipe to cook day before, or the sausage egg tarts in the old bisquick recipe thread. Chafers are finr for holding, but can't be used to reheat- do that in an oven or roaster. |
