I am catering a wedding for 432 people. They are having ham, swedish meatballs, mashed potatoes, corn, ramen noodle coleslaw and romme grot! We need enough ham to make sandwiches later on in the night. These are the amounts I am estimating, could you check it out for me, please!! ham-175lbs meatballs-175lbs potatoes-170lbs peeled gravy-???? coleslaw-12 gallons corn-??? It is buffet, selfserve. Thanks Ellen!! |

See the planning and shopping for large community dinners for help with the gravy and corn. You will need 8 serving lines and at least 6 cooks and 25 servers to set up, serve and clean up this meal. |

the other amounts look fine? The ham is bone-in should I add more? 10 gallons of gravy |

Yes, the other amounts look fine, and you will probably have meats left over, even bone in. But that is a flood of gravy- at 1/3 cup per person, I think you need about 4 gallons- check our math. |

We are planning sandwiches later on during the dance. How many dozen would you suggest doing? Your gravy math is great!! |

1 regular sandwich, cut into 2-3 pieces per person, plus 10%, assuming other snacks |
