Planning semi-formal sweet 16 for 100 people even mix of teens and adults. Party is from 6:00-11:00. Buffet service hired 3 servers to help. Menu is veggie tray, fruit tray, cheese tray, nachos, wings, entrees would be baked ziti with sausage, plain pasta, lemon chicken garlic bread, rice pilaf and and an italian salad. Used your quanities for 100 on all because teens can really eat. Do I have to much food or not enough. Dessert will be cake along with a fruit selectin. Thanks for the help. |

Final count for party is in 70 people even mix of adults and teens. Daughter has decided she would prefer red roasted potatoes with rosemary and garlic instead of rice. Not sure how many pounds of thinly sliced chicken cutlets to buy. 5 people are vegetarian. Also how far ahead can i maked the baked ziti? I was thinking the week before and freezing. I would not bake before freezing. Thanks for your help. |

1 pound raw boneless chicken for each 2 meat-eating diners. Yes you can make the ziti ahead and freeze before baking, as long as there is a heavy sauce and you do not overcook the ziti. 20 pounds of potatoes would probably leave some over, with the pasta. Extra firm tofu can be prepared by the sane method as the lemon chicken; slice and drain before cooking. |
