Hi Ellen! I am so glad to have stumbled across your website during an internet search!! My fiance and I are on a VERY tight budget for our wedding, and we are considering doing the food ourselves (with lots of help from loved ones). I've looked over a lot of your recommendations on here, and I put together a basic list of what I've gathered may work for us. I would love to hear your advice - are we doing too much or too little of each item? We are trying to keep costs down as much as we can, but don't want our guests to go hungry either. We will be purchasing most of our items from our local Sam's Club, since it is the cheapest option for us. We are also going a non-traditional, more casual route and making pizza our main item. It will be an hors d'oevres/buffet styled reception, with the food and dessert tables available from 5pm to 8:30pm. At 8:30 we will take down the initial items and put out a table of snack foods until the end of the party at 10pm. Beverages will obviously be from 5pm to 10pm as well. We have to stock the entire bar, so we are just going a very basic route with a light beer, wine, and some basic mixed drink options. Here is what I have come up with so far: Cocktail wieners - 12 lbs, served in crockpots with chili & grape jelly sauce Pizza - 8 sheet pizzas cut into small slices with varying toppings (they are 18x26x1", baked in standard full-sheet restaurant baking pans, we are having these made at a local pizzeria) Vegetable Platters - 20 lbs with ranch dip Fruit platters - 20 lbs with yogurt fruit dip Sundried tomato turkey wrap roll-ups - 120 pieces Assorted meat & cheese slice tray - 9 lbs total Assorted cheese cubes - 8 lbs total Crackers - 3 lb Ritz, 4 lb Club Pickles - 3 lb jar petite dill Olives - 42 oz jar green, 51 oz can black Cupcakes - 120 count Brownies - 120 ct small triangles (6 lb total) Cookies - 84 ct tray (cookies are about 3-4 inch in diameter) At 8:30pm, we will pull most if not all items and put out: Chex Mix - 4 lb Assorted Chips - 6 lb Mini Cinnamon Rolls - 96 ct (4 lb total) Beverages: Soda - 30 2L bottles Iced T &/or Lemonade - 4 gallons Wine - 14 1.5L bottles, half red, half white 1 Keg light beer 2 1.5L bottles Vodka 2 1.5L bottles Rum 1 1.5L bottle Whiskey 3 gallons assorted juices (orange, pineapple, cranberry) 2 lb Coffee (with creamers and sweeteners) 200 lbs Ice (wedding is in July, hall is air conditioned but not sure how the temp will be with all the people there) Like I said, this is just my initial thought from what I'm understanding of your recommendations. I would truly appreciate any guidance you could give me in coming up with a game plan to present to those who are helping us make this happen. Thank you so so much for your time, Ellen! |

The least costly way to serve alcohol is a punch or sangria- no hard liquor; if you have hard liquor you need to allow for quite a bit more. Stop serving any liquor an hour before the end of the party and have fresh coffee. You need a nibble table for the hour while the couple gets pictures, etc. before the meal; punches (lemonade and an alcoholic punch?) and 3 of the items- fruit, cheese and crackers and a spread or dip Cocktail wieners - 12 lbs, served in crock pots with chili & grape jelly sauce- OK Pizza - 8 sheet pizzas cut into small slices with varying toppings (they are 18x26x1", baked in standard full-sheet restaurant baking pans, we are having these made at a local pizzeria). This is about 2 standard slices per person, is that right for your crowd? I would add a salad - Caesar maybe? 3/4 amount for 100 Vegetable Platters - 20 lbs with ranch dip- OK Fruit platters - 20 lbs with yogurt fruit dip- would consider more, especially if served during both snack times and dinner Sun-dried tomato turkey wrap roll-ups - 120 pieces- OK if half pieces, need about 1/2 total per person if smaller pieces Assorted meat & cheese slice tray - 9 lbs total- I would skip, have about 6 pounds cubed ham or salami Assorted cheese cubes - 8 lbs total would increase to 16-20 pounds cheeses including dips and spreads, use during both snack time and dinner Crackers - 3 lb Ritz, 4 lb Club -have several more in reserve Pickles - 3 lb jar petite dill- about a gallon assorted Olives - 42 oz jar green, 51 oz can black -drain the canned and marinate a few days in in olive oil with sliced whole lemons and maybe whole chilis. and oregano. For the green, drain, oil, Italian spice and whole garlic cloves, maybe a little mint Cupcakes - 120 count- OK Brownies - 120 ct small triangles (6 lb total)- allow 2 pieces per person Cookies - 84 ct tray (cookies are about 3-4 inch in diameter) OK. I would get smaller, same weight, if that is an option At 8:30pm, we will pull most if not all items and put out: Chex Mix - 4 lb Assorted Chips - 6 lb- need 8, or 10 if corn or mixed. Need savory dips (crock pot queso? salsa? 7 layer dips?) Mini Cinnamon Rolls - 96 ct (4 lb total) OK Add 6 pounds each nuts and chocolate candies (kisses? M&M) Beverages: Soda - 30 2L bottles- 1/2 cola, about 1/3 that sugar free. Iced T &/or Lemonade - 4 gallons. OK have some sugar free Wine - 14 1.5L bottles, half red, half white; if not wine drinkers, more will drink white; merlot and pinot grigio 1 Keg light beer-OK 2 1.5L bottles Vodka- would skip theses as discussed above 2 1.5L bottles Rum 1 1.5L bottle Whiskey 3 gallons assorted juices (orange, pineapple, cranberry) 2 lb Coffee (with creamers and sweeteners)-this is barely 1 small cup per person; see the beverage planning page; you need dinner coffee with decaf and tea also, plus about 1 pound more to make a fresh urn for the last hour if alcohol is served earlier 200 lbs Ice (wedding is in July, hall is air conditioned but not sure how the temp will be with all the people there)-OK. Turn the AC on the night before; cooling the furnishings (tables, chairs walls) as well as the air makes a big difference in how it holds. |
