We're making the jambalaya for 100 next week and I just wanted to double check the instructions: It's just 13 cups of raw rice, correct? With the same amount of broth added with the rice? Everything I've made on this site works great, but I just thought I'd better check that amount. Thanks so much. |

Yes, the canned tomatoes provide additional moisture. Check the last 15 minutes and add some reserved broth if needed... Thanks for the pat on the back. |

By the way, you can increase the rice to 18 cups as long as you also increase the broth. You can also agg 2 pounds of celery with the onions and peppers. |
