Appetizers for 300 two hour span. 4-6pm

I am hosting a teachers conference from 4-6pm for 300 people. It is appetizers only appetizers consist of hot items: marinated meatballs, vegetarian egg rolls, beef and chicken skewers,and mini burritos.
Cold items: deli trays 3 meats and 3 cheeses,mini sub sandwiches, fresh fruit, and chips and salsa.I have no clue how much to prepare of each item so I don't run out of food or embarrass myself. My event is May 5, 2011. Please can you help me Helpless man in Fresno CA.

Hi, Joe,

My experience is that teachers are pretty heavy eaters, so these amounts reflect that.

This is a meat heavy, and thus fairly costly, menu. If you are on a budget, you might look at the changes suggested.

Hot items:
marinated meatballs, 1 pound per 5 people
vegetarian egg rolls, 1 per person
beef and chicken skewers, (skip beef, you have the meatballs and deli meats); 3-4 ounces raw chicken per person
mini burritos, 1 per person plus 20%.

Cold items:
deli trays 3 meats and 3 cheeses, 2 ounces meats, 2 ounces cheeses
You need crackers or small rolls, 2 ounces rolls or 1 ounce crackers per person you need mustards in squeeze bottles
mini sub sandwiches, size of sliders or smaller? 2 per person- larger, 1 plus 10%. These could be omitted!
fresh fruit, see fruit tray page, do for full 300
chips and salsa, 8 pounds corn chips or to6tilla chips per person, 1/4 to 1/3 cup salsa per person .

That's 8 pounds tortilla or corn chips per 100 persons, sorry.

Hello,
Thank you for helping me with yout great suggestion and portions. But I can not eliminate any of the items, they want them all. So that being said the sandwich meats and cheese is it the same portioning as deli tray? And is the beef portion the same as the chicken for skewers? and last but not least if I use a meat slicer to slice fruit would I still need the same amount of produce if I slice fruit at an 1/8 - 1/4 in thick? please get back to me as soon as possible. OK, I would basically split the meat for the skewers between beef and chicken, 1/3 chicken, 2/3 beef.
Yes, with the 1/4 inch slices, you still want that much fruit. 1/8 inch is too thin- drips and breaks- hard to eat.
