Hello Ellen, My sister requested potato salad for her birthday party. She is inviting 40 people and I need to know how many pounds of potatoes to get? Also we are driving a distance to get to her. (4 hours). My next question is: Should I make the salad beforehand and transport in coolers or do I just prep the potatoes and eggs the day before and then mix everything at her house the day of? |

You would have to keep the eggs and potatoes iced anyway, so it may be easier to make the day before and transport iced. Potato salad benefits from sitting around in its own dressing. I do 35 pounds for 100. 11-14 pounds, depending on how heavy eaters they are, would be plenty. |
