I would like to know how many pounds of whole salmon fillets I would need for a buffet style luncheon for 400 guests, please. The buffet also includes boneless chicken and roast beef, with salad and sides. There would be approximately 4 people and 4 home kitchens used to bake the whole salmon fillets. |

At the maximum, about 1/4 of the people will take the fish. Use the plan for 100 table guideline and you will have plenty. Overcooking, especially with reheating, is an issue. Consider cold salmon with a dill sauce if that is a possibility (eg summer event). |
