The venue I am planning on using for my reception & wedding only allows their list of preferred caterers to use the oven. If self-catering, which we are planning on, they do allow us to use the fridge and warmers. If we reheat the food before heading to the ceremony, how long will the food hold in warmers before transferring to chafing dishes? Is there something I could use besides an oven to reheat the food onsite that you know of? Thanks!! |

Don't know what kind of warmers, but if you reheat elsewhere, you have to keep it hot while transporting, before it goes into the warmers. Pro caterers use big plastic heated cases called cambros, which can be rented, which transport and hold hot food safely for up to 6 hours. But the big secret is, choose the menu to minimize the need to heat. The 18 quart electric roasters are a plug in and heat option, depending on amounts of food. |
