Mac n cheese

04/10/11 		I am making mac n cheese for 125 dinners for a fundraiser. We are having a fish fry- 2 pieces of catfish, slaw, baked beans,mac n cheese and a roll. To save on cost I was wondering if I can used canned cheese sauce plus maybe milk, mustard, tabasco for flavor instead of grated cheese? I was planning on making 12 lbs of macaroni?

04/11/11 		Cheddar cheese is cheap at Sam's or Costco. Don't use the canned stuff, it is not tasty. You only need 6-8 pounds sharp cheddar or 10 pounds mild for this batch. See pots.the simple cheese sauce recipe in the mac and cheese recipe on big

04/11/11 		Thanks! I will get the Sams cheese. Is 12 lbs macaroni,25lbs baked beans and 30 lbs cole slaw too much?? I was confused with three sides if I should reduce amounts.

04/11/11 		You only reduce if you have more than one of the same type, and beans, starch, and slaw/salad are 3 different types.
