I have been making tofu using a soy milk machine. the end product does not have a good consistency (it's formed like a block but its mushy not firm) I have watched my temp. closely and I use nigari as a cougulant. Has anyone else had this problem, I bought my soybeans at a local coop and I'm wondering if they are old? |

It sounds like it needs to be more firmly pressed and drained in the mold? |
