See the serves 100 page and the salad page in big pots for pasta salad amounts, and there are some recipes for 100 person salads, too. You want a TOTAL of 1 gallon side dishes for each 10 persons. Fruit- You want about 5-6 ounces of ready to eat for each person for your fruit total, so you might start with the idea of 350-400 pounds whole fruits, or 260 pounds ready to eat. Remember that unlike grapes and canteloupes, UNCUT watermelons with unpunctured skins will keep many weeks in a cool place, so cut only about half to start and sell off what is left over. |

Sharon, please go to the new pages page and click on the link to feeding 500 to read that article. Also the one on big pots about self catering, if you haven't read it already. Is the food included in the event price, or are the items bought separately by the diners? This strongly effects how much and what is ordered! If it is included in the event price, I suggest you add baked beans or cowboy beans of some kind to help fill plates at a lower cost.
Here is a start on your shopping list, assuming price included in the event:
This is a 5 hour event. To serve 500 to 600 people cafeteria line style (which is faster than per order)during a three-hour event requires 40 to 60 on-site volunteer servers. This does not count the cooks or kitchen crew, or the clean up after. If you try to serve 125 people per hour, quite difficult with the size staff you are considering, no one will get seconds and the last people will get nothing for the first 3-4 hours. Not the best plan. Think about the amount of food serving booths you see at a county fair- way more than one! |

Invest in scoops that make 1/3 cup scoops. 3n 1/2 gallons for 2 scoop sundaes if you scoop the ice cream. Double that if teenagers scoop their own. Add about 20% extra if grownups scoop, 10% each for more than one flavor. |

Wedding for 125 Mia, it depends on whether this is a meal replacement. Assuming it is NOT, for example 1 PM wedding with a 2 hour reception to follow, you want to allow about 12 pieces per person, with 1-2 ounces of cheese counting as 1 piece. If it is am 11:AM wedding, you basically have to double everything, as people will be eating lunch. 1 gallon of coffee is 128 ounces. If you are counting in puny cups, it is 20, but if you are serving 12 ounce cups as most people do these days, it is just 11 servings. At breakfast this is good for about 8 peuple and about 1 in 6 will look for decaf, at dinnertime it is fine for 12 to 15 and most will be decaf. |

Fresh fruit, you want 6 ounces ready to eat. Frozen peach slices, partially defrosted, are very tasty and will keep the whole salad cold. If you are using all canned fruit, 1 #10 can is 24 1/2 cup servings. This is the usual size for a dished up little dish of fruit, such a s a hot spiced fruit dish. The fruit tray page in the Big Pots Planning section has the cup and pound measurements for lots of different fruits. If it is a cold fruit compote and you are using some fresh fruits, melons, especially large watermelons, are a good economy. Just get rid of the seeds as you slice and dice. |

This depends somewhat on whether you serve in two meals, a morning break and an afternoon break, OR whether you serve all day. See the beverages list and do breakfast coffe for 100, plus soda for 50. Then in the afternoon do coffee for 50, iced tea and soda for 100. I would split the snacks into two parts so they were not the same selection with cookies in the afternoon and muffins in the morning. Cheese both times- your audience will do better with the proteins- and a big basket of hardboiled eggs is cheap and popular. General idea of amounts on the breakfast and dessert planning pages. Karen, the mass (kitchen) at the military base can tell you EXACTLY how much they would use for this number of soldiers. For 300 people, you need at LEAST three cooks and 16 servers. 15-16 #10 cans will provide 1/2 cup servings for each of your 300 people. Mashed potatoes, start with 115 pounds potatoes. Pies, 1 pie for each 4 people for these big eaters. I would make some sheet cakes insread of all pies. You need 7 gallons of gravy... Turkey, whole, I allow 1 pound raw per person. Boneless ham as a second choice, 4 people per pound. Check my large recipes for mac and cheese, etc. |

Eleanor, I would allow about 4-5 servings to the pound, unless this is a turnip-eating crowd you won't get a lot of requests for seconds. 1/2 cup is a standard serving size for cooked vegetables. Linda, 4 people per chicken, 2 pieces each, is enough, but I usually add 10% more. A #10 can of green beans makes 20 people's-worth of servings, 12 cups cooked. If you offer broiled chicken as well, some folks will prefer that... |

Hi, Sargeant, There is a LOT of good serving info on the military cooking manuals, I use them myself for basic amounts. Anyway, you want to allow 6 oz cooked turkey and 3 oz cooked ham for everyone except little kids. You will have some control since you are carving and I presume serving. 1 pound whole raw turkey makes 2 people's worth at this rate. You do know that turkeys 16 piunds and over have more meat in a pound of raw than the samller turkeys? So 2oo pounds raw whole large turkeys and 50 pounds boneless ham, more or less... My favorite memory of an overseas military thanksgiving as a kid, they gave every kid a whole box of Whitman's chocolates to take home. How thrilling!!! |

By the way, about the turkeys; quartered turkeys roast easier and faster and you can get more in t he same amount of oven space at one time. Also, if you have a lot of kids, you can get turkey legs only, they weigh about 1 pound each and come in cases of 40 pounds. Always a good backup if you are worried about quantity. |

Hi, if this is a menu where a stew type entree is acceptable, this is by far the simplest for a single person to handle unless you want to go with either a meatloaf/ground beef dish or an entree casserole or baked pasta dish. It can be fancy, such as a cassoulet or stroganoff, pork chops or cutlets in gravy, etc. I have quite a lot of entree recipes for 100 in the big pots section, you need to double the recipe for 200 and add 10% if it will be 220 or if it is 200 people serving themselves buffet style. |

For the slaw, check the slaw page in big pots. For the stew, allow 4 ounces raw boneless meat, 6-7 ounces potato and about 8-10 ounces other veggies (onions, carrots, celery, etc) to start. Invest in a GOOD beef bouillon /gravy base to enrich the gravy )I like "Better then Bouillon" brand), and consider using some canned or pureed tomatoes as part of the gravy, you will want about 3-4 gallons of gravy for each 100 people. |

The sausage gravy recipe has a LOT of sausage. You can decrease the sausage by 1/3 or increase the gravy by 1/3 to 1/2 and still have plenty of chunks. Use good sausage, of course; sage or hot is nice. If you have no bacon grease, butter is a possibility, but for heavens sake, if it is a feast, get the bacon grease. Bea, the best green beans like this I had lately, were steamed, fresh, a mix of yellow, light green and the very deep French, served whole with just the stem end clipped. They had julienned carrots almost the length and about half the diameter of the green beans steamed and tossed in. The sauce was a browned real butter sauce with the blanched slivered almonds toasted in. It did not need venegar for flavoe and it was beautiful. A sauce of fresh dill and olive oil is another option. Greek style cooked in a freshly simmered sauce of cherry tomatoes and slivered celery is also great. |

Annette, ice cream is actually included in the quantities for 100 pages, even with some sauce discussion. For 60 people, one single flavor (vanilla), use 2/3 of the 100 amount. If it is teens or self service, you will use more- about 1 1/4 cups per person. If you have the time and the freezer space, premaking and freezing ice cream balls/ scoops will limit the amount used. ir have someone scoop the ice cream- two 1/2 cup scoops is usual, making 1 cup per person=60 cups=15 quarts=3 3/4 gallons. If you have two flavors, you need to allow more, at least 4 1/2, as it is very hard to guess how much of each flavor. This varies hugely by age, region of the country and local preference. |

There is specific info for quantities on the planning pages for desserts, appetizers and beverages.With the wedding cake you will want 1 dessert serving per person, but cut or portioned into smaller portions so people can try several different ones. I like to use picnic hams, simmered to shredds, for the meat. I would use white beans (navy, pea) if I did only one. Yvonne, this is quite a light meal for 20. It will cook out to 1 plate each with about 3 ounces of cooked chicken, 1/4 to 1/3 cup of green beans, and two modest slices of bread. Even if I did not add more meat, I would double the amount of green beans and add 6 quarts or 2 9x13 dishes of of heavy side veg or starch dish- rice, potatoes or potato/pasta salad, baked potatoes, etc. And probably a good dessert. But if my budget allowed, I would start by adding 1 more bag of chicken. |

If you take a deep breath and think about the plates, you can figure this out easily. You want a piece of fish, small fries=4 ounces and 2 hushpuppies for a kid. You want 2 goodsize or three smaller fish (about 9 ounces) large fries=7 ounces and 3 hushpuppies for each adult and teen, and you want to add 20% or 1/5 to this total for seconds. You may add 1 1/2 gallons of slaw or salad. Tea, you have plenty. Ice, you want 1 pound per person for drinks and chilling . |

Becky, the basic rule of thumb is 1 gallon total of sides for each 10 people, so if you have 80 people, you want about 8 gallons. I would add some cole slaw or green salad and have about 3 1/2 gallons of potato, 2 1/2 of mac/pasta and 2 of slaw. You canalso just use my recipes and make 50 persons-worth (1/2 recipe) of mac and of potato and about 2-3 ounces per person of slaw or salad- either will work. Your potato salad recipe should start with 70 pounds of raw potatoes. If you have no other side dishes (slaw, beans, etc) you will use up to 20 gallons of potato salad. If you have other similar dishes, you want 20 gallons TOTAL of side salads, of which at least 1/2 should be potato salad. The meats are harder. 5 sandwiches per cooked ready to eat pound of meat/meat balls, probably 1 and 1/2 sandwiches per person- depends on time of day, side dishes, dessert, alcohol- so say 3 people per pound of ready to eat meats. Chickens dress to 1/2 of their starting weight when skinned and boned, beef to 60% of raw weight after cooking. You have to decide how to split it up- I don't know what is more popular in your area- but if you stick to this total you will have plenty. Get really good buns (bakery fresh,maybe) and look on the sandwich events page for amounts of condiments. |

Karen, nice menu. You want 8-9 ounces total cooked meats for each adult or teen, 5-6 per younger. I would get 1 sausage per adult, 1 hot dog per kid, 1 patty per person and 1 3 ounce piece of per person (that's a half breast). You will have plenty.
Jo, If you are having to actually barbecue, consider serving grilled chicken breasts and real kiolbasa (Sam's carries a good one called "Kiolbasa brand"} instead of burgers and dogs. Actually easier to cook, nuch nicer and not much more expensive if bought in bulk. You don't mention the kitchen arrangements or whether you are cooking or assembling from deli. If assembling, I would get two cakes a white and a chocolate and great rolls (1 per person) from the best bakery in town (onion, sesame, rye, etc). Buy frozen or fresh cut up fruit for a fruit salad or melon boat. If you can recruit 2 Nesco roasters have one full of really good beans and one of scalloped potatoes or hash brrown casserole; if not, you want a potato and a pasta salad. Pickles, olives, onion rings and condiments are covered on the sandwich event page, I would also add some sauerkraut and about 6 pounds of sliced cheese (jack and cheddar). Slaw stays fresher than tossed salad, many good recipes on the site. Do not forget an urn of coffee with the sodas and/or tea and/or punch. |

Are you considering making these or at least some of them, yourself? You could cut your cost in half or less easily. I might use a marinated salad such as my artichoke condite instead of the plain tossed salad. Can be made ahead, great with the salmon and keeps well if nt eaten up. It depends on the size of the rib slabs, but allowing 1/4 chicken or 1 pound ribs, or 3 people per pound in the sausage and peppers per adult you may be a bit light in the meat department. You might calculate the number of people's worth you have and add some additional sausages- 1 pound for 3-4 servings. Otherwise it looks good. I would definitely add a slaw, green salad, marinated vegetable salad or second veggie side dish, but I am a veggie lover. |

If this is beyond the budget, allow 1/2 pound and 1 kielbasa or polish sausage or 4-6 ounces of smoked sausage. sumit, I can tell you in pounds- you will have to convert to kilos. Raw, boneless chicken, you want about 1 pound for each 3 persons for a good size portion, but for a stir fry or other similar dish, 1 pound for each 4 to 5 persons is enough. For chicken quarters, you would need about 17 pounds for 1 quarter per person. Fish is usually served in smaller portions, so 1 pound for each 4 persons is enough for fish steaks, pieces or filets. But if you buy whole, cleaned fish, it takes about 1 1/2 pounds for 4 people. |

In the USA? If you could turn back the clock to the 1970's... The US government, which cuts corners terribly in its food programs for the poor, estimates about $115 per month per adult, which is basically $4 per day, and this is considered an emergency allotment, not adequate to provide complete nutrition for anyone with special needs. You don't say how long this is for or describe the population of eaters or the facility. It would require a full time commitment to shopping and from scratch food prep on your part to do this on a long term basis, as well as volunteer help in the kitchen. It would be mostly vegetarian menus, lots of grain and bean dishes. You would need to grow sprouts, make bread and yogurt, no tea or coffee, etc. It might be possible for a week or two if you could solicit food or money donations and/or have the men bring donations to augment the pantry. I have several recipes for beans for 100 on a page called "Beans for 100", use any one as a quantity guide- make 4 times. On the chili page, pickles and so forth are covered- these quantities will be close for your amounts. You might like the garlic pickles recipe there. 1 gallon of regular pickles is usually used for 100 people. |

If you will make your own estimates, I will be glad to check them for you and advise. For example, you need different amounts of ham for dinner, lunch, sandwiches, receptions- different amounts of fruit for dessert, fruit salad, or fruit trays- I don't know what your party plan is, but all these are covered in the tables. |

Julie, this is just about enough food. I would add 1 gallon baked beans and double the chicken. The cake will make 50 servings. How about a second half sheet such as a chocolate cake or chocolate on yellow or marble? The pleasant alternative would be a selection of cookies and bars- about a hundred pieces. Hi, as mentioned before, shrimp is one of those foods that, however much you serve, all will be eaten. That said, for appetizers you want at least 2 to about 3 ounces per person, the number of shrimps depends on the the size per pound of the shrimps you buy. For example, if the shrimps are the 21-30 per pound size, it works out to about 4 shrimps per person. |

I'm making a palm tree topiary to stick fruit into the base and they are wanting fruit arranged around the base of the tree to eat out of. Fresh pineapple, watermelon, cantalope, and grapes. You will also need at least 4 cooks in the kitchn, 2-4 bartenders, and at least a dozen servers. I DO NOT recommend self catering a wedding reception this size. Susan, This is A LOT of entrees for 75 people, I would skip the bowties and broccoli especially with the sandwiches. I would make lasagna for 30, parm for 25-30, 1 small piece of chicken per person. If no sandwiches, I would increase the lasagna to 40 servings. Then you cut the casseroles very small. Chrystal, these are covered in the plan for 100 pages- you need 4 times the amount for 100. This depends on whether this is the main course or a side salad. For a side salad, for each 100 people you want 15 heads Romaine; feta crumbles, 5 pounds; 5-8 pounds olives (if you are being paid, and this liable, get pitted- broken teeth are expensive); 3 pounds burpless cukes, thin slices; a tomato presence- this might be a few slices/ pieces or 4-6 grape tomatoes per salad. Some folks add small croutons, 3-4 pounds, PLUS you need 2 1/2 quarts appropriate dressing. If it is an entree, I would increase the lettuce to 20 heads, the cheese about 50% and add 3-4 dolmas, as well as pita bread. Aetna makes a very tasty vegetarian brand, about $7 for a can of 60 at my local Middle Eastern deli. |

Erika, you don't say if this is for one meal? Since I posted all my quantity tables in 2004, I no longer do initial estimates- that is a $150 service and very time-consuming to boot- I DO check your estimates and write back and forth on this column. You need to tell me about your kitchen and staff, dishwqashing, local food delivery/restaurant supply delivery, etc. Please read the "wedding dinner" start guide. This is a WAY TOO BIG task for a few people, and you need commercial kitchen facilities, walk in refrigerators and delivery of food- this is a HUGE amount of food to handle. Even if you start now, you will be hard pressed to manage, especially with no previous experience. You need to consider having some items catered, or drop-off catered where the caterer makes the dish and drops it off ready to serve. |

You need about 3 cooks and 12 servers to set this up, serve the buffet table, and take it down! It is WAY too many to do at the house- too bad you did not plan 4 smaller parties- if that is the situation, yur best and safest bet is to order the meet catered- cooked and dropped off ready to serve at party time- ready to eat, boneless, you want about 1 pound of thin-sliced roast beef for each 4 people PLUS 2 ounces each ham and turkey. If it is cold, deli-sliced, for sandwich making, this will make 1 1/2 to 2 sandwiches per person. If it is hot, be sure you have at least two hot side dishes (beans, potatoes, rice, starch) to slow down the meat consumption- set up the meats at the end of the buffet table. I would not allow more than 12 ounces, assuming you will be putting a scoop of rice in the bowl to start and ladling the gumbo around it. This is a generous serving. Allow 1 gallon for 12 servings. I use smoked picnics simmered to make my gumbo base, yes even with seafood gumbo, and have had lifetime Mississippi Gulf Coast cooks ask for the recipe. |

The taco bar page will also give approximate amounts for 100 servings of many toppings. Soup or baked potatoes are excellent side dishes for fall salad lunches. Nan, Smoked picnics are the smoked shoulders, like hams only the front legs and less expensive. Simmered with onions and celery they make a terrific broth, and you cook till the meat just shreds, shred it while removing bones skin and excess fat and return to the broth. It will cut down on the amount of sausage you need, too. Yes the broth base can be made ahead and refrigerated, but pour it into containers less than 4 inches deep, or it will satrt to sour before it cools. |

One formula that is used by some caterers: If the event is only hors d'oeuvres (with no meal to follow) then serve 5 hors d'oeuvres per person for 1st hour and 3 hors d'oeuvres per person for subsequent hours. If the event includes a meal, then serve 4 hors d'oeuvres per person for 1 hour prior to meal. Adrian, this is a very complicated menu for 150 people. It is professional level catering and cannot be done in the home kitchen or by an inexperienced caterer, and your not knowing how to estimate it suggests that it is too complicated for you. For example, there are too many oven and fried items for the home kitchen. Estimating this level event is considered a professional service. The usual fee for from scratch estimates for this type menu (just the estimate and shopping list) is about $150! If you are dealing with a caterer to obtain the dishes, they should be able to give you accurate estimates for the amounts. If you want to do it yourself, you need to reconsider the menu. Linda, what I meant by make an initial estimate is, decide how many people's worth of each type food and make an estimate of what you will need. I can't help you on how many people will want gumbo versus Jambalaya, and I can't tell if you know that both these are usually served over white rice, with soft Italian style bread on the side, or if you know that red beans are usually an entree over white rice, with sausage; dirty rice is a typical cajun side rice, but would not usually be served with gumbo, for example. Salad and usually a vegetable would also be served. If you can tell me HOW MANY servings of each dish you want, I can try to help you; but I can't take the responsibility of doing your shopping list when the total needs are so unclear. |

Robert, for the fruit see the fruit tray page, look at the tray for 25, and multiply to your desired number. There is a very extensive list of other fruits giving quanitities so you can exchange. Two pounds whole chicken makes 1 pound chicken meat, which is 2 cups. On the sandwich event page and the plan for 100 page you will find guidelines on amounts of chicken salad for 100 in various events (reception, luncheon, sandwiches, etc.) Using your prefered recipe, figure out how many cups you need to make the required amount, convert to pounds, then to pounds whole chickens. Basically, though, 1 pound whole chicken makes 1 cup chicken meat. |

Good choice, way less fat than bacon. Locally, we can get Johnson Bros spiral cut ham ends and pieces for under $2 per pound, this is excellent ham just perfect for frizzling up for breakfast, omelets, etc. It is mostly slices that are not quite perfect enough for deliuxe packaging. In addition to the at-home preppers, it takes about 25-30 volunteers day-of to do this. Read the wedding dinner article for help with planning. Have EVERYONE who is helping, read the food safety articles. Allow 35-40 pounds potatoes per 100. Baked seasoned wedges (dipped in oil and seasoned flour and sprinkled with paprika for color) are a simple way to do popular potatoes that will hold, can be done ahead and reheated and don't turn colors.
For generous beans, you want 6 #10 cans per 100, for modest portions on served plates, you need 4. See this great recipe for something a little different: Tea is covered on the beverage planning page. Have sweetened and unsweetened. The pink stuff is the least expensive artificial sweetener. Adding a served dessert (dump cake or cobbler would be my plan) is a way to make the meal memorable. Where will you prepare this? Have you checked on temp health permits? Some states require them for events this big. Have you checked on single event insurance? Seasoned Baked Potato Wedges
Potato wedges tossed with seasonings and oil and baked
6 medium potatoes (2 1/4 to 2 1/2 pounds) Optional ingredients:
cayenne pepper NOTE: to get a coated type effect with less fat, cut the potato wedges into milk, and mix 1/2 cup flour into the spices before using them to coat the potatoes. 1. Scrub potatoes and rinse under cold water. Pat dry. 2. Cut potatoes into wedges or thin steak fries (about 6-8 wedges per potato). 3. Using a large mixing bowl, toss potatoes in oil. 4. In a small bowl, mix dry ingredients thoroughly. Pour over potatoes and toss to coat. ALTERNATIVE: if doing many, put the spices in a plastic bag and shake the wedges. 5. Preheat oven to 400 degrees. Spread potatoes in a single layer on an ungreased non-stick* baking sheet, or a greased regular sheet. 6. Bake for 10 minutes, stir and loosen, then bake an additional 20-25 minutes, or until potatoes test done with a fork. 7.Sprinkle with salt to taste. Can garnish with a sprinkle of Parmesan or chopped parsley. |

Kara, as I have explained before on several threads, this board is for family type cooks, not paid catering. There are lots of reasons, but one important one is that the paid caterer is legally liable for ANYTHING that goes wrong at an event; incorrect storage and transport, food poisoning, injury to workers or guests, unhappy results with the customer refusing to pay, etc; you need event insurance for this. Also, there are very stiff regulations in most states, such as yo can't prepare the food at your house unless it is a licensed commercial kitchen. Also, you need legal contracts specifying foods and amounts, who takes home the leftovers, etc. For help, go to the catering board at chef2chef.com. That said, all these foods are covered in the plan for 100 page, the appetizer planning page, the sandwich planning page and the fruit tray and vegetable tray page. You can easily prepare a good estimate using these pages, remembering to add 10% for self service. |

Think of the group as 2/3 of 100 and use the planning tables and the bbq and brisket page to help you estimate. You are serving two entrees, so you need to have more than 1/2 of each, so people can get their first choice- you want about 40 servings of each chicken, plus 30 burgers plus 30 sausages or hotdogs. You will have some left, but this is the only way to give everyone their first choice.
For 100 people you would want a total of 10 gallons of beans and salads, so for 60 you want about 7-8. Maybe 2 gallons each?

For 20 people, this is a lot of food, even given that they are starving and drinking. I would skip the tuna completely, just make sure the fruit tray was the serves 16-20 size, and MAYBE add a tray of 60-80 "bites" of something, such as bruschetta, spinach Parmesan squares, stuffed cherry tomatoes, or some little starchy/veggie bite thing. Get the blackened tuna when you and an appreciative friend can really sit and enjoy it as a meal. |

But I or anyone in the business will tell you that you need 2-5 years pro in the business working for someone else before you open your own business catering, if you don't want to fail. Basically, non of the other foods are competitive types for the fruit. I would do 10-12 times the amounts for the fruit tray for 25 on the fruit tray page, substituting cantaloupe pound for pound with the other melon. I would suggest trays, not mixed salad, easier to eat (no bowls and spoons) and more impressive on the table. Consider a creamy yogurt dip on the side with vanilla, honey and mace- 1 cup for each 7-8 people. |

Vanessa, this is a site set up so you can use my tables to make an estimate, post it, and I can review it for you. For example, I can't do a good entree estimate without more information; I don't know if your roast beef is pot roast or prime rib, you have three entrees for 60 people, when 2 is much more usual and much easier to estimate. The side dishes are an unusual selection in that there are three major starches for 60 people, which means you will have to make a lot extra to make sure everyone gets their first choice; plus you are also having potato sald, which is a very heavy choice for this menu. It is also very helpful to know the type of crowd (age, etc) and the event. You may want to rethink the menu a little and simplify, then read the table instructions for meats and the other foods and start with an estimate, so I have something to work with. |

Pasta primavera is a last minute dish, requires continuous cook attention and doesn't hold well at all. Have you considered a chilled pasta primavera? Very appropriate for a summer beach wedding and all done ahead of time. If you like the idea, I could whomp you up a reception size recipe. Here is a sample family size recipe to try on your bride and groom (it would make about 8 side servings): PASTA PRIMAVERA
3 cloves garlic, minced Saute garlic and pine nuts in hot oil in a large Dutch oven 2 to 3 minutes or until pine nuts are lightly browned, stirring frequently. Add broccoli and next 9 ingredients; cook, stirring occasionally, 5 minutes or until vegetables are crisp-tender. Stir in tomatoes. Chill vegetable mixture at least 1 hour. Cook spaghetti according to package directions; drain. Rinse with cold water, and drain. Melt butter in a large saucepan; stir in whipping cream and cheese. Cook, stirring constantly, until cheese melts. Add spaghetti, and toss gently. Cover and chill mixture at least 1 hour. To serve, spoon vegetable mixture over spaghetti, or toss gently. |

Susan, it depends on what else is served, but assuming this is teens you need 10 pounds of corn chips and 2 gallons of dip per 100 people. Rachel, you need 430 pounds, which means at least 3 full time roasters hired. This is not a particularly cheap or practical meal to self cater for this large of a group. |

30 is actually a small party. Get 1/3 the amount of salad for 100 on the plan for 100 page. Adults will eat about 1/2 a 12 inch pizza, teens about 3/4, tweens about 1/3. You might check with your local pizza buffet on the assortment- just make sure there are a least 2 plain cheese and some pepperoni. Eith fruit cobbler or dump cake, 3 9x13 pans, plus a couple gallons of vanilla ice cream and some syrups for quick sundaes would be fine with this. |

Hi, Kathy, Fortunately for you, each of these items is discussed in detail in its own article. The buttons for fruit trays, veggie trays, and beverages are at the top of the main cooktalk page. The amounts are for 100; you would use 3 1/2 times that amount. For the cheese, if that is the only protein food available, allow 2 ounces per person (1 pound for each 8) if sliced, or 2 1/2 (1 pound for each 6-7) if cubed. Part of this can be cheese logs or spreads; you go by weight. If you need crackers, 6-7 pounds per 100 people. When you do the beverages, be sure to have a sugarfree choice alternative. In a crowd that size you are sure to have diabetics and low-carb folks. Dinner coffee service would be a good choice (it's on the beverage page). The amounts in my tables assume it is about 2 hours and not over a meal time. See the appetizer planning page for a discussion on how timing affects quantity. |

Janice, For 100 people, I would use the dressing guideline in the salad section of the plan for 100 list. 3 pounds of salad is a tiny amount for 100 people; 18 would be the usual amount; for only 3 pounds, you could use 8 ounces of dressing of each of the 3. 2 tablespoons (1 ounce) per bagel for the cream cheese. The veggie tray page tells you how many pieces you get from weights of various veggies. You can select your 4 pounds from this. But again 1 1/2 to 2 ounces per person is the more usual amount. |

Tia, this is very easy to make yourself and since you are providing so much of the setup yourself including the ice and the alcohol, I would suggest you consider making it yourself. As long as you are able to keep all the ingredients cold before mixing, you can make a great punch. As the pricing, 12 gallons is 24 liters, 12 2 liter or 1/2 gallon bottles, and the most expensive item they are supplying is less than $2 per half gallon. So you are looking at 150 for something where the food cost is less than 50. This is a normal catering markup. You can save yourself about 100 by mixing it yourself. |

red bean- 8 lbs w/ smoke sausage 3 lbs- about 100 modest servings- I might go 12/5 rice- 12 lbs- fine pulled pork- 40 lbs- if this is raw weight it will make about 120 sandwiches, if cooked, about 160 rolls for pork- 400- no more than 200- some people might make meatball sandwiches as well jambalaya- 12 lb - sausage and shrimp in it- you could run out- this is only about 1 1/2 gallons. I would probably skip it, you have a lot of food. shrimp fettuccine- 30 lbs- I would go 40 if I skipped the Jambalaya asst sandwiches- 300- not necessary, they have to be made the morning of and the leftovers aren't usable.. You could put out some bowls of assorted fillings (tuna salad, pimento cheese, good peanut butter swirled with a good jam), plus baskets of good bread.

If the wedding is immediately preceeding (1 PM), many people will eat before they come, which helps reduce the amounts. Don't make the sandwiches ahead. You will need 8, yes eight, serving lines to feed 400 people. Ypou will need 4 days to prep it. You will need at least 30 people (experienced, and not wedding party members) to set up, serve, and clean up this size event. You need at least a pro manager; most of the work needs to get done while the wedding is in progress. I do not recommend self-catering an event this size unless you have a lot of experience with groups over 100.
That said, you want 3 ounces ready to eat ham, 3 ounces ready to eat turkey, 2-3 ounces breads/rolls per person. Use the condiment table on the sandwich page to calculate 4 times the amount for 100. pasta salad, baked beans, potato salad, use 4 times the amounts for 100 on the plan for 100 page Fruit salad, I suggest fruit trays, look better, keep better, and the leftovers are more usable. See the fruit tray page, do 4 times the amount for 100. |

Canned potatoes aren't nearly as tasty as fresh. I allow 35 pounds small reds per 100 people if I am plating, add a few pounds if it is self serve. You need 12 quarts=3 gallons cut up fruit or fruit cocktail for small fruit cups, 16-18 quarts for slightly larger. |

Please confirm quantities Hi I have been catering and event for 8 years but this year it happens to fall on Good Friday (no meat for most). I plan to cut back on bologna and ham and increase the tuna because of Good Friday but not sure how much would be proper. These people will arrive at location around 9 AM and eat around 11:15 AM. There are 177 adults and 75 6 year old children We have bread donated it comes in a variety of bulkie rolls and sliced bread. Tuna sandwichs are premade morning of and cut into 1/4's. Yes, you need at most 6 dozen hot dogs, and probably not that; 4 would do it. To fill out the salads, you could add about 2 gallons each 3 bean salad (really good with corn added), broccoli salad/slaw, cherry tomatoes with fresh mozzarella and basil (caprese), Texas caviar, tabouli and Greek salad from my salads that hold section. 4 gallons potato, 6 pounds dry pasta for the mac salad, 20 pounds cabbage for the slaw, and the veggie trays, skip the plain tossed, and you will have an awesome spread which can be made ahead of the day. |

Hot dogs and hamburgers are just the opposite, way too many choices due to the toppings, and it really slows the lines. Eddie, for beef, depends on the dish, see the plan for 100 page and multiply the correct one by 15. For the veggies, about 330 pounds of raw cabbage heads and 34 pounds raw per 100 for the squash. Those smart folks at Harvard use this- it feeds about 90. I would make it in a pan with the sauce already over the fish, to get a stewy effect.

For regular neighborhood parties, I suggest 1 burger and 1 hot dog per person. You probably want to have less- so start 600 burgers and 300 hot dogs and serve 2 hot dogs as one serving. Tara, a wedding reception really needs an appetizer plan as well, and here is why: A self-catered buffet is a real challenge to the organizers, and things don't always come together as smoothly as hoped. By planning and setting up an appetizer area or "nibble table" which is ready when the guests begin to arrive, the cooks and servers have time to complete the arrangement of the dinner buffet. This is especially critical if there are children among the guests, or there is a wait before dinner, as at a wedding reception. This does not have to be complicated. Three items, plus a punch, or two if one is alcoholic, are sufficient. Typically, include a fruit tray, a cheese tray and an attractive dip or spread; or you can go with a dinner theme such as TexMex with chips, salsas, Texas caviar and guacamole; Italian with bruschetta or antipasto; maybe shrimps or other cold seafood, if budget permits. One appetizer service area is needed for each 100 guests. This is a huge crowd, requiring about 4-5 kitchen folk and 15-18 people out front to set up, serve, and clean up a party this size. Also there is no provision for vegetarians, and with 300+ guests there will be some. Would you consider an alfredo pasta without meat? Will you start a new thread and write back? Thank you for the advice. When I meet with potential brides, I always highly suggest hors d'oeuvres (either buffet, stations or passed). This bride is not doing pictures at the church after the wedding (they are doing them before) so she did not want the extra food or costs. Very few children will be in attendance. She also did not want a vegetarian option. My question was trying to figure out the portions and amount of food to prepare. The plate size she is using is 10.25 inch and she does NOT want a separate salad plate. Since they have to put all the food on one plate, there will not be room for huge portions. I want to make sure I have plenty of food; however, I don't want to have so much that we have excessive waste and leftovers. Thanks so much! |

Chrisy, shrimp saganaki is usually served straight from the frying pan, because it does not hold very well and cannot be reheated at all. In addition, you have to provide a second entree choice for any non-shrimp eaters or vegetarians. Asa fundraiser, shrimp is not low cost. The fundraiser is for a Greek School which is part of a church. We will serve after the church services on Sunday. The problem is that is a fasting period for orthodox and we can only serve items with no meat or dairy products. Shellfish is allowed. This is something the PTA does for years. Usually they offer shrimps in tomatoe sauce over rice. I thought that if I prepare the sauce in ahead all I need to do is adding the shrimps for 5 minutes at the end. Not sure how good this will hold thought. The did it in prior years and it was ok sometimes shrimps were over cooked. Some people suggested to do something a little different and do shrimps over linguini but I think that is more risky. What do you think?? Usually we charge $15 per plate. Including broccoli, salad and desert. I would appreciate any suggestions you might have. Greeks are tough crowd to please so I feel I don't have too many choices. Thank you so much!!! |

How much food to serve 350 I need to feed 350 people for lunch after a conference. My menu chicken salad, meatballs, chicken wings, pasta salad, potato salad. How many lbs of each do I need? Thank you! |

OK, unless you are being paid big bucks, by which I mean 20+ per person, and ESPECIALLY if this is volunteer or at cost, you are going to insist on menu modifications and help. The strawberries alone are a 2 person job. Chicken Strips- 1 pound per 6, get small ones, dipping sauces, 1 cup per pound (about 1 gallon per 100)
Turkey/ham sandwiches, do these as tea sandwiches, also, 800
sausage , Assuming these are the cheddar and sausage/bisquick type balls, 3 per person fruit tray- 2 1/2 times the amounts on the deluxe tray for 100, and consider putting these by the chocolate fondue II discuss below veggie tray, 1 pound per 10, 1 cup thick Ranch dip per pound

cookies chocolate covered strawberries- strongly suggest no; a fondue with fruit and cake for dipping is a much better choice- not a fountain, as they will be dressed up, and bad things happen, see my chocolate fountain article. You can add marshmallows and put the cookies, fruit and bars near the chocolate- have 2-3 tables for this. You can write back.
