I suggest you purchase frozen concentrate. Amounts are listed on the beverages page of the big pots planning section. The maximum is 6 ga;llons per hundred plus ice for a meal, but you may need as little as half as much.

How much pasta salad for graduation reception
Ellen:
We are having a graduation reception for appx 800 people. The menu- hot turkey sandwiches, potatoe salad, pasta salad, carrots and dip, pickles, potatoe chips, watermelon, canteloupe and grapes.Cake and ice cream for dessert.
Can you tell me how much pasta I would need to serve this many people and how many watermelons, cantaloupes and grapes to purchase.

See the serves 100 page and the salad page in big pots for pasta salad amounts, and there are some recipes for 100 person salads, too. You want a TOTAL of 1 gallon side dishes for each 10 persons.

Fruit- You want about 5-6 ounces of ready to eat for each person for your fruit total, so you might start with the idea of 350-400 pounds whole fruits, or 260 pounds ready to eat. Remember that unlike grapes and canteloupes, UNCUT watermelons with unpunctured skins will keep many weeks in a cool place, so cut only about half to start and sell off what is left over.

Is this a Mexican style fruit cup, or are the cukes a standalone salad? Check the quantities to serve 100 page and the fruit trays page in Big Pots. For a stand alone informal/bbq dessert, most caterers allow 1 pound of whole watermelon per person.

This is for a garden wedding.

I was thinking of ordering full pans of the following. (each full pan is for 30 people)

If it is 40 people, this is way too much food. I would skip the meatballs entirely and get half pans of everything else. You will still have too much, but not extremely so.

How much food to buy is almost the least of your worries. I nee more info.

Is this teens, families, men, adults? Is this for one meal, a weekend, a party, what? What are your cooking and refrigeration facilities? How many people will be helping with the cooking and serving? You need about 70 people to serve this many, and finding the volunteers or staff and supervising them is a job all by itself.

This meal is for a Christian Nightclub. I will be serving from 8pm to 1am. It is for 9/2/05, one night.I have a extremely large grill and a two basket deep fryer. I will be in an outside tent. my refrigeration will be inside and outside. Sharon, please go to the new pages page and click on the link to feeding 500 to read that article. Also the one on big pots about self catering, if you haven't read it already.

Is the food included in the event price, or are the items bought separately by the diners? This strongly effects how much and what is ordered!

If it is included in the event price, I suggest you add baked beans or cowboy beans of some kind to help fill plates at a lower cost.

Here is a start on your shopping list, assuming price included in the event:
200 pounds sausages (1 sausage or large hotdog per person)
1 4 ounce frozen hamburger patty per person
6 pieces chicken wings per person (1 wing makes 2 pieces)
6 pounds chips per 100 people
3-4 ounces fries per person, depends on portion size
Condiments and beverages covered under the quantites for 100 section. You will need coffee setup too.

This is a 5 hour event. To serve 500 to 600 people cafeteria line style (which is faster than per order)during a three-hour event requires 40 to 60 on-site volunteer servers. This does not count the cooks or kitchen crew, or the clean up after. If you try to serve 125 people per hour, quite difficult with the size staff you are considering, no one will get seconds and the last people will get nothing for the first 3-4 hours. Not the best plan. Think about the amount of food serving booths you see at a county fair- way more than one!
So first things first, the staff will become frustrated and exhausted, increase the size of the staff. For example, the fryer needs a bagger and possibly also a server for the fries. Also, all staff including the cooks needs to be switched out at least every hour for a 15-20 minute break!
If the booth is too small for more staff, set up auxiliary serving stations for the items suggested below.
You need 1-2 people who are just runners going back and forth to the kitchen and supplies and keeping the condiment tables filled.
Here are the changes I would make:
1) Change hot wings to several flavors of sticky wings, prepare in several Nesco roasters and hold hot from the start, so they are ready to serve at the beginning of the event and can be served quickly without tying up the fryer. Add a staffer for these.
2) Make steamed hotdogs or even better Polish sausage or kielbasa by layering sauages in two other Nesco roasters with a good quality sauerkraut. Have a third roaster for warming the buns. Put the relish table near but away from the booth so they pick up their buns and fries and move away from the serving line. Add another staffer just for these. If someone doesn't want steamed they can ask for grilled.
3) Use the grill for hamburgers and grilled onions only. People love grilled onions, they make the place smell great and you can use a 4 ounce patty instead of a 5 ounce patty without it looking skimpy.

PS if you don't wanty to use saurkraut, layer with frozen bell pepper strips and chopped onion that have been thawed overnight in the refrigerator. Voila! Sausage and peppers!

Sharon, I just posted a bunch of info about cakes. Start on the quantities for 100 page or desserts and teas page and go to the new pages page to find simple yellow cake for 100 from scratch. Any recipe with that amount of flour will be about right for your amount.

Invest in scoops that make 1/3 cup scoops.

3n 1/2 gallons for 2 scoop sundaes if you scoop the ice cream. Double that if teenagers scoop their own. Add about 20% extra if grownups scoop, 10% each for more than one flavor.

Mia, it depends on whether this is a meal replacement. Assuming it is NOT, for example 1 PM wedding with a 2 hour reception to follow, you want to allow about 12 pieces per person, with 1-2 ounces of cheese counting as 1 piece.

If it is am 11:AM wedding, you basically have to double everything, as people will be eating lunch.

All the items including beverages you mention are discussed on the planning for 100 pages in the big pots section. If you prepare an estimate and email it to me, I will go over it for you. Are you bride ofr family, or is this a job?

Allow 1 tablespoon of butter and 2 tablespoons of sour cream per person, 10 pounds of butter and 20 pints of sour cream. If it is buffet service, you can provide part of the butter as a soft tup margarine such as Smart Beat, and part nonfat sour cream, but they need to be labelled.

1 gallon of coffee is 128 ounces. If you are counting in puny cups, it is 20, but if you are serving 12 ounce cups as most people do these days, it is just 11 servings. At breakfast this is good for about 8 peuple and about 1 in 6 will look for decaf, at dinnertime it is fine for 12 to 15 and most will be decaf.

Fresh fruit, you want 6 ounces ready to eat. Frozen peach slices, partially defrosted, are very tasty and will keep the whole salad cold.

If you are using all canned fruit, 1 #10 can is 24 1/2 cup servings. This is the usual size for a dished up little dish of fruit, such a s a hot spiced fruit dish.

The fruit tray page in the Big Pots Planning section has the cup and pound measurements for lots of different fruits. If it is a cold fruit compote and you are using some fresh fruits, melons, especially large watermelons, are a good economy. Just get rid of the seeds as you slice and dice.

This depends somewhat on whether you serve in two meals, a morning break and an afternoon break, OR whether you serve all day. See the beverages list and do breakfast coffe for 100, plus soda for 50. Then in the afternoon do coffee for 50, iced tea and soda for 100.

I would split the snacks into two parts so they were not the same selection with cookies in the afternoon and muffins in the morning. Cheese both times- your audience will do better with the proteins- and a big basket of hardboiled eggs is cheap and popular. General idea of amounts on the breakfast and dessert planning pages. Total side dishes usually allowed is 1 gallon for each 10 people. I allow about 4 1/2 gallons potato salad and 3-4 gallons baked beans per 100 people, because I am also adding slaw or salad. If you do not have slad/slaw or any other side dishes split about 6/4.

Karen, the mass (kitchen) at the military base can tell you EXACTLY how much they would use for this number of soldiers.

For 300 people, you need at LEAST three cooks and 16 servers.

15-16 #10 cans will provide 1/2 cup servings for each of your 300 people. Mashed potatoes, start with 115 pounds potatoes. Pies, 1 pie for each 4 people for these big eaters. I would make some sheet cakes insread of all pies.

You need 7 gallons of gravy...

Turkey, whole, I allow 1 pound raw per person. Boneless ham as a second choice, 4 people per pound.

Hi, I NEVER use red potatoes for mashed, only baking potatoes. That said, at least 35 pounds fresh potatoes per 100 people. Broccoli, depends on whole or cut up, about 3 people per pound.

Eleanor, I would allow about 4-5 servings to the pound, unless this is a turnip-eating crowd you won't get a lot of requests for seconds. 1/2 cup is a standard serving size for cooked vegetables.

Linda, 4 people per chicken, 2 pieces each, is enough, but I usually add 10% more. A #10 can of green beans makes 20 people's-worth of servings, 12 cups cooked. If you offer broiled chicken as well, some folks will prefer that...

There is a LOT of good serving info on the military cooking manuals, I use them myself for basic amounts.

Anyway, you want to allow 6 oz cooked turkey and 3 oz cooked ham for everyone except little kids. You will have some control since you are carving and I presume serving. 1 pound whole raw turkey makes 2 people's worth at this rate. You do know that turkeys 16 piunds and over have more meat in a pound of raw than the samller turkeys?

So 2oo pounds raw whole large turkeys and 50 pounds boneless ham, more or less...

My favorite memory of an overseas military thanksgiving as a kid, they gave every kid a whole box of Whitman's chocolates to take home. How thrilling!!!

By the way, about the turkeys; quartered turkeys roast easier and faster and you can get more in t he same amount of oven space at one time. Also, if you have a lot of kids, you can get turkey legs only, they weigh about 1 pound each and come in cases of 40 pounds. Always a good backup if you are worried about quantity.

Sargeant, Re: the turkeys: my friends at butterball.com suggest you allow 1 full pound of turkey per adult person unless you are preparing a LOT of side dishes. I have found that when I am using very large turkeys the lower amount is fine, but just want you to have a heads up on this.

Hi, if this is a menu where a stew type entree is acceptable, this is by far the simplest for a single person to handle unless you want to go with either a meatloaf/ground beef dish or an entree casserole or baked pasta dish. It can be fancy, such as a cassoulet or stroganoff, pork chops or cutlets in gravy, etc.

I have quite a lot of entree recipes for 100 in the big pots section, you need to double the recipe for 200 and add 10% if it will be 220 or if it is 200 people serving themselves buffet style.

For the slaw, check the slaw page in big pots.

For the stew, allow 4 ounces raw boneless meat, 6-7 ounces potato and about 8-10 ounces other veggies (onions, carrots, celery, etc) to start. Invest in a GOOD beef bouillon /gravy base to enrich the gravy )I like "Better then Bouillon" brand), and consider using some canned or pureed tomatoes as part of the gravy, you will want about 3-4 gallons of gravy for each 100 people.

Need to know how big of a hog, salads-potatoe, cole-slaw, baked beans, relish trays, cheese and crackers, rolls, butter, bbq sauce, other condiments, drinks sodas etc. will have own alcohol. paper supplies everything needed for party to cover 250-275 people. will be serving all day. thought maybe appetizers during day then the hog and trimmings as a dinner. Lori, Since April 2004, I no longer do whole plans for people; too many requests. So I posted a bunch of planning pages in the bi pots section for BBQ, beverages, salads etc. What I WILL do is check your estimates if you email them to me at the link at the bottom of the page.
The usual estimate is 1 1/4 to 1 1/2 pounds whole raw hog per person, (yes, 30+ pounds) which is 4 pigs or more or 10 suckling pigs or more and I have to warn you, this is an expensive and VERY difficult roast; you need expereienced pit crews, and at least 20 additional servers/cooks to pull it off. You would be well-advised to coonsider hiring grillmasters/ smoker masters for a pork loin and brisket roast instead, or do one pig and the rest pork and brisket.

Even how much salad and salad dressing is covered, including thick versus thin. Please write back about any individual items you have a hard time figuring, and CONGRATULATIONS!

Dwight, the sausage gravy recipe was one of the over 200 ready to post recipes that disappeared forever when my old computer died over Christmas.

You MUST use the black pepper. You MUST use whole milk. And yes, you actually add the bacon grease to the sausage grease. It's just a heart attack waiting to happen...

This is for 200 people:
* 25 pounds ground pork sausage
* 4 cups bacon grease
* 6-3/4 cups all-purpose flour
* 5 gallons whole milk
* 1/4 cup salt OR to taste- do taste while adding
* 2 tablespoons and 1/4 teaspoon ground black pepper

DIRECTIONS:

1. Brown sausage in a roasting pan over medium-high heat. Set aside, leaving the drippings in the skillet.
2. Mix bacon grease into the sausage drippings. Reduce heat to medium, combine with flour, and stir constantly until mixture just turns golden brown. This take at least a half hour. If you burn it you have to throw it away and start over, so do not turn your back.
3. Gradually whisk milk into skillet. When the mixture is smooth, thickened, and begins to bubble, return the sausage to skillet. Season with salt and pepper. Reduce heat, and simmer for at least 25 minutes, stirring, covering.

The sausage gravy recipe has a LOT of sausage. You can decrease the sausage by 1/3 or increase the gravy by 1/3 to 1/2 and still have plenty of chunks.

Use good sausage, of course; sage or hot is nice. If you have no bacon grease, butter is a possibility, but for heavens sake, if it is a feast, get the bacon grease. Some people add a little garlic or sage, or Tabasco, but die-hard sausage gravy fans will notice.

Also, it tends to separate if served standing on a buffet line-

Bea, the best green beans like this I had lately, were steamed, fresh, a mix of yellow, light green and the very deep French, served whole with just the stem end clipped. They had julienned carrots almost the length and about half the diameter of the green beans steamed and tossed in. The sauce was a browned real butter sauce with the blanched slivered almonds toasted in. It did not need venegar for flavoe and it was beautiful.

A sauce of fresh dill and olive oil is another option. Greek style cooked in a freshly simmered sauce of cherry tomatoes and slivered celery is also great.

Annette, ice cream is actually included in the quantities for 100 pages, even with some sauce discussion. For 60 people, one single flavor (vanilla), use 2/3 of the 100 amount. If it is teens or self service, you will use more- about 1 1/4 cups per person. If you have the time and the freezer space, premaking and freezing ice cream balls/ scoops will limit the amount used. ir have someone scoop the ice cream- two 1/2 cup scoops is usual, making 1 cup per person=60 cups=15 quarts=3 3/4 gallons. If you have two flavors, you need to allow more, at least 4 1/2, as it is very hard to guess how much of each flavor. This varies hugely by age, region of the country and local preference.

This is a very delicious meat and people tend to eat plenty. I would buy 3 pounds raw trimmed for each 4 people to allow for generous portions and cooking shrinkage. Potaoes, start with 1 to 1 1/4 pound raw for each 3 people. Green beans 4-5 ounces fresh for each person (1 pound for 3 to 4 people).

For my wedding reception (about 350 people) we wanted to serve family style : Platters of fruit (grapes, apples, maybe peaches or nectarines) Cheese and Bread. We will also have a cake/dessert table. I allow 120 slices/ rolls or bread servings per 100 people. There is specific info for quantities on the planning pages for desserts, appetizers and beverages.With the wedding cake you will want 1 dessert serving per person, but cut or portioned into smaller portions so people can try several different ones.

Lots of children at 8PM? Sounds like a plan for trouble. Consider setting up a rocking room or quiet room for the tired out.

For 300 people, I might make 3 different bean and ham dishes- there are lots of good ones. Like ham, lima and brown sugar, navy and onion, blackeyed peas and snaps.

I like to use picnic hams, simmered to shredds, for the meat. I would use white beans (navy, pea) if I did only one.

One secret to really good bean dishes is to use half a head of celery and an onion to each pound of dry beans.

Side Dish Beans for 100 People

3 gallons (4 #10 cans)ready to eat Beans
2 heads celery, slices and browned
1-2 pounds onions, diced and sauteed golden
1 gallon crushed tomatoes
3 pounds brown sugar
6 pounds shredded ham or smoked brisket, chopped
OR diced, thick bacon cooked crisp

Drain the juice from half the beans, save in case you need it to moisten as it heats. Spray the roasting pan with non-stick spray, then mix the drained beans in an 18 quart large roaster oven with the onions and celery, rest of the beans, the tomatoes, sugar and meat/brisket. Heat covered on low until heated through, preferably at least 2 hours; keep warm to serve.

You can also add:
1-2 pounds diced bell pepper
8 ounces prepared mustard

Yvonne, this is quite a light meal for 20. It will cook out to 1 plate each with about 3 ounces of cooked chicken, 1/4 to 1/3 cup of green beans, and two modest slices of bread. Even if I did not add more meat, I would double the amount of green beans and add 6 quarts or 2 9x13 dishes of of heavy side veg or starch dish- rice, potatoes or potato/pasta salad, baked potatoes, etc. And probably a good dessert. But if my budget allowed, I would start by adding 1 more bag of chicken.

I was wondering how many pounds of frozen french fries and hushpuppies it takes to feed about 30 people, 5 which are children? Also, how many fish filets would you fix for that many people? If you take a deep breath and think about the plates, you can figure this out easily. You want a piece of fish, small fries=4 ounces and 2 hushpuppies for a kid. You want 2 goodsize or three smaller fish (about 9 ounces) large fries=7 ounces and 3 hushpuppies for each adult and teen, and you want to add 20% or 1/5 to this total for seconds. You may add 1 1/2 gallons of slaw or salad.

Tea, you have plenty. Ice, you want 1 pound per person for drinks and chilling .

Becky, the basic rule of thumb is 1 gallon total of sides for each 10 people, so if you have 80 people, you want about 8 gallons. I would add some cole slaw or green salad and have about 3 1/2 gallons of potato, 2 1/2 of mac/pasta and 2 of slaw. You canalso just use my recipes and make 50 persons-worth (1/2 recipe) of mac and of potato and about 2-3 ounces per person of slaw or salad- either will work.

Meat and cheese trays, you want 4-5 ounces meat and 2-3 ounces sliced cheese per person. See the sandwich event page for more info, condiments and pickles, etc.

I am serving around 200 people for graduation, mostly adults. I am having meatballs, cooked chicken sandwiches and barbeque beef sandwiches. How many lbs of each would you recommend? Also, how many lbs of potato salad would I need for that number of people? Thanks.

Your potato salad recipe should start with 70 pounds of raw potatoes. If you have no other side dishes (slaw, beans, etc) you will use up to 20 gallons of potato salad. If you have other similar dishes, you want 20 gallons TOTAL of side salads, of which at least 1/2 should be potato salad.

The meats are harder. 5 sandwiches per cooked ready to eat pound of meat/meat balls, probably 1 and 1/2 sandwiches per person- depends on time of day, side dishes, dessert, alcohol- so say 3 people per pound of ready to eat meats. Chickens dress to 1/2 of their starting weight when skinned and boned, beef to 60% of raw weight after cooking. You have to decide how to split it up- I don't know what is more popular in your area- but if you stick to this total you will have plenty. Get really good buns (bakery fresh,maybe) and look on the sandwich events page for amounts of condiments.

They will be pretty tired of watermelon by the end of the week, consider adding other melons, grapes, bananas, apples and tangerines. Get small apples and bananas. Oranges only if you cut and/or peel them.

I would buy 1/2 pound of fruit per kid per day counting all fruits on the menu.

serving several grilled choices to 125 people
I am having a Memorial day cookout graduation party for 125 people. We will be cooking hamburgers, hotdogs, marinated chicken breasts and chicken feta spinach knockwurst. Half of the people coming are children ranging from elementary school age to high schoolers. I plan on having several salad selections, fruit, baked beans, two pasta selections,roasted vegetables, and desserts including a cake. How much of each meat should I get? Obviously the hamburgers and chicken will be the most popular choices.

Karen, nice menu. You want 8-9 ounces total cooked meats for each adult or teen, 5-6 per younger. I would get 1 sausage per adult, 1 hot dog per kid, 1 patty per person and 1 3 ounce piece of per person (that's a half breast). You will have plenty.

First of all, use the plan for 100 tables for quantities, that will help.

If you are having to actually barbecue, consider serving grilled chicken breasts and real kiolbasa (Sam's carries a good one called "Kiolbasa brand"} instead of burgers and dogs. Actually easier to cook, nuch nicer and not much more expensive if bought in bulk. You don't mention the kitchen arrangements or whether you are cooking or assembling from deli.

If assembling, I would get two cakes a white and a chocolate and great rolls (1 per person) from the best bakery in town (onion, sesame, rye, etc). Buy frozen or fresh cut up fruit for a fruit salad or melon boat. If you can recruit 2 Nesco roasters have one full of really good beans and one of scalloped potatoes or hash brrown casserole; if not, you want a potato and a pasta salad. Pickles, olives, onion rings and condiments are covered on the sandwich event page, I would also add some sauerkraut and about 6 pounds of sliced cheese (jack and cheddar). Slaw stays fresher than tossed salad, many good recipes on the site.

Do not forget an urn of coffee with the sodas and/or tea and/or punch.

Ellen, I work at a State Prison. We will be using the picnic tables (decorated) in the visitation area, and actually cooking on a very large grill (oil drum cut in half) I do have 2 Nesco roasters.I will look at your 100 tables.
Should I assign dishes for people to bring or take up money and plan to do everything? I cook for our family outings all the time (20 people) but this is above my average scale.

Peggy, 40 pounds of fresh potatoes to make oven potato wedges for 100. You do NOT want to get into frying that many French fries, unless you like a hot spattery mess...

Gloria, for quarter chickens, you need 82 pounds of quarters per 100 people for 1 quarter each. 35-40 pounds of potatoes per 100; 5 #10 cans green beans for 100, but 7 is usually enough for 150; or 1 pound fresh or frozen for each 4 people.

Are you considering making these or at least some of them, yourself? You could cut your cost in half or less easily. I might use a marinated salad such as my artichoke condite instead of the plain tossed salad. Can be made ahead, great with the salmon and keeps well if nt eaten up.

Look on the quantities for 100 page, there are very complete salad listings, make or buy 3/4 of the amount for 100 for each salad. You want about 7 gallons total, 3 should be potato, 2 of each of the others.

7 pounds dried beans for each 100 servings. Meat varies; can be as little as 6-8 pounds shredded for adding a meaty flavor, up to 22-30 pounds for lots of chunks of ham or sausage. I alwways chunk in 3 or 4 heads of celery, a bunch or two of parsley and a couple of tablespoons of dried marjoram and/or dried ginger to lighten the beans and make them more digestible, as well as onions and garlic to taste. It depends on the size of the rib slabs, but allowing 1/4 chicken or 1 pound ribs, or 3 people per pound in the sausage and peppers per adult you may be a bit light in the meat department. You might calculate the number of people's worth you have and add some additional sausages- 1 pound for 3-4 servings.

Otherwise it looks good. I would definitely add a slaw, green salad, marinated vegetable salad or second veggie side dish, but I am a veggie lover.

Ellen, Thanks for the input. I have another question. I would like to cook babyback ribs the day before in the oven and finish with BBQ sauce on the grill the next day. Do I need to reheat the ribs before putting on the grill. Is this an acceptable practice or should I use a different method for cooking ahead of time.

Somewhere on this site there is a recipe for jerk ribs that is cooked the day ahead and finished on the grill day of, I think in the BBQ section , Follow this general pattern watching that you chill fast and don't leave out of the fridge long when reheating, and you will have tasty, safe ribs. Yum.

As a side dish, 6 people per pound, as a main dish 4 people per pound dry weight of pasta, a bit more if you are using one of the big ones (raddiatore, mostaciolli, etc.) 6-8 quarts sauce for 25 people- more for the thicker sauces.

Sue, look at the fruit tray page and decide how much of each you need. The info is quite extensive. Unless you have help, fresh pineapple will be a problem- slow to prepare and the acid can burn the hands after doing many. Wear gloves. Consider ading other fruits to reduce the amount. See the note on watermelons, consider the comparative ost of seedless versus your time removing all the seeds.

Donna, as long as you serve some good MANLY sides such as potato salad or scalloped potatoes and beans, 1 pound raw per person is a fine serving. If this is beyond the budget, allow 1/2 pound and 1 kielbasa or polish sausage or 4-6 ounces of smoked sausage.

sumit, I can tell you in pounds- you will have to convert to kilos. Raw, boneless chicken, you want about 1 pound for each 3 persons for a good size portion, but for a stir fry or other similar dish, 1 pound for each 4 to 5 persons is enough. For chicken quarters, you would need about 17 pounds for 1 quarter per person.

Fish is usually served in smaller portions, so 1 pound for each 4 persons is enough for fish steaks, pieces or filets. But if you buy whole, cleaned fish, it takes about 1 1/2 pounds for 4 people.

There are a lot of pasta casseroles fopr 100 posted in the website. Make 2/5 or 40%- ylu dont need to allow extra, lades don't eat as much as a mixed group. Do consider using a tri-color rotini as the pasta- very pretty in the dish and a little different.

In the USA? If you could turn back the clock to the 1970's...
The US government, which cuts corners terribly in its food programs for the poor, estimates about $115 per month per adult, which is basically $4 per day, and this is considered an emergency allotment, not adequate to provide complete nutrition for anyone with special needs.
You don't say how long this is for or describe the population of eaters or the facility. It would require a full time commitment to shopping and from scratch food prep on your part to do this on a long term basis, as well as volunteer help in the kitchen. It would be mostly vegetarian menus, lots of grain and bean dishes. You would need to grow sprouts, make bread and yogurt, no tea or coffee, etc. It might be possible for a week or two if you could solicit food or money donations and/or have the men bring donations to augment the pantry. You could email with further details.

I read on one website that 5lbs makes enuf for 100, but you could also just check the label on the package. Of course it depends on what else you are serving as to how much of any one thing gets eaten. I have several recipes for beans for 100 on a page called "Beans for 100", use any one as a quantity guide- make 4 times.

On the chili page, pickles and so forth are covered- these quantities will be close for your amounts. You might like the garlic pickles recipe there. 1 gallon of regular pickles is usually used for 100 people.

Julie, this is just about enough food. I would add 1 gallon baked beans and double the chicken. The cake will make 50 servings. How about a second half sheet such as a chocolate cake or chocolate on yellow or marble? The pleasant alternative would be a selection of cookies and bars- about a hundred pieces. Check the sandwich event page for a list of condiments (lettuce, tom, mayo, etc.) needed for a sandwich bar for 100.

Hi, as mentioned before, shrimp is one of those foods that, however much you serve, all will be eaten. That said, for appetizers you want at least 2 to about 3 ounces per person, the number of shrimps depends on the the size per pound of the shrimps you buy. For example, if the shrimps are the 21-30 per pound size, it works out to about 4 shrimps per person.

Kim this is a lot of entrees, I can only suggesst you want to end up with 1 1/2 pounds total of food per person, so divide it up according to what you know about your guests preferences. There is a good quantity list for salads at the top onf the plan for 100 page in Big Pots. Use 4/10 of the amount for 100.

Jan yo probably want bar type food- chicken wings, little smokies, maybe queso dip or nachos (quweso is easier). 7 layer dip platters on antipasto platters can be done ahead and put on the tables. If veggies sneak in, it should be spinach or artichoke dip or a relish tray- olives, pickles, etc.

There will be a full meal (chicken, noodles, slaw, homemade bread, etc.) with wedding cake and fruit for afterwards at a reception I'm helping with. I'm making a palm tree topiary to stick fruit into the base and they are wanting fruit arranged around the base of the tree to eat out of. Fresh pineapple, watermelon, cantalope, and grapes. Gloria, if it is over a mealtime, you will need about 1 1/2 pounds of food per person using dinner type hors douvres, if 2pm, about 1 pound. You will also need at least 4 cooks in the kitchn, 2-4 bartenders, and at least a dozen servers. I DO NOT recommend self catering a wedding reception this size. Kathy, strange but true, the amounts for the baked potato bar for 100 on this site are just about perfect for tacos for 100, especially if you add 7-8 pounds each dry beans and raw rice cooked up.

Susan, This is A LOT of entrees for 75 people, I would skip the bowties and broccoli especially with the sandwiches. I would make lasagna for 30, parm for 25-30, 1 small piece of chicken per person. If no sandwiches, I would increase the lasagna to 40 servings. Then you cut the casseroles very small.

Chrystal, these are covered in the plan for 100 pages- you need 4 times the amount for 100. I would roast the potatoes and reheat.

This depends on whether this is the main course or a side salad. For a side salad, for each 100 people you want 15 heads Romaine; feta crumbles, 5 pounds; 5-8 pounds olives (if you are being paid, and this liable, get pitted- broken teeth are expensive); 3 pounds burpless cukes, thin slices; a tomato presence- this might be a few slices/ pieces or 4-6 grape tomatoes per salad. Some folks add small croutons, 3-4 pounds, PLUS you need 2 1/2 quarts appropriate dressing.

If it is an entree, I would increase the lettuce to 20 heads, the cheese about 50% and add 3-4 dolmas, as well as pita bread. Aetna makes a very tasty vegetarian brand, about $7 for a can of 60 at my local Middle Eastern deli.

PS on the Greek salad. I don't eat raw onion, so I skipped it, but some sliced raw onion, possibly soaked in Italian style dressing, is customary. I would not mix it in, but place so it could be easily removed.

Erika, you don't say if this is for one meal?

Since I posted all my quantity tables in 2004, I no longer do initial estimates- that is a $150 service and very time-consuming to boot- I DO check your estimates and write back and forth on this column. You need to tell me about your kitchen and staff, dishwqashing, local food delivery/restaurant supply delivery, etc.

Please read the "wedding dinner" start guide. This is a WAY TOO BIG task for a few people, and you need commercial kitchen facilities, walk in refrigerators and delivery of food- this is a HUGE amount of food to handle. Even if you start now, you will be hard pressed to manage, especially with no previous experience. You need to consider having some items catered, or drop-off catered where the caterer makes the dish and drops it off ready to serve.

Neil, are you trying to do this at your house, or do you have a rented commercial kitchen? You need about 3 cooks and 12 servers to set this up, serve the buffet table, and take it down! It is WAY too many to do at the house- too bad you did not plan 4 smaller parties- if that is the situation, yur best and safest bet is to order the meet catered- cooked and dropped off ready to serve at party time- ready to eat, boneless, you want about 1 pound of thin-sliced roast beef for each 4 people PLUS 2 ounces each ham and turkey. If it is cold, deli-sliced, for sandwich making, this will make 1 1/2 to 2 sandwiches per person. If it is hot, be sure you have at least two hot side dishes (beans, potatoes, rice, starch) to slow down the meat consumption- set up the meats at the end of the buffet table. Marsha, amount depend partly on whether this is a meal or a reception, if a meal whether plated or buffet/self-serve. What time and service are you planning? Please read the wedding dinner/ self-catering article also; you need help and planning help both ahead and especially day of, even if you have to hire it, get someone else to supervise the kitchen while you go to the wedding.

This one is a little more difficult I think.
I am making Gumbo ith rice and cornbread.
I will also have side of pies or cake, and drink (I will go to the bverage section for that).
I am cooking for a small Flea Market to help raise money for a Food Pantry, I will be serving from 10:30am to 2:30 pm. I am nervous that I will make to much or not enough.
I am hoping that I will get at least 250 to 300 people or maybe a few more... ehhh!
My question is, if I want to just cook for 300 people, how many gallons of Gumbo would I need to feed when serving 12 to 16 ounces?

I would not allow more than 12 ounces, assuming you will be putting a scoop of rice in the bowl to start and ladling the gumbo around it. This is a generous serving. Allow 1 gallon for 12 servings.

I use smoked picnics simmered to make my gumbo base, yes even with seafood gumbo, and have had lifetime Mississippi Gulf Coast cooks ask for the recipe.

Joann, See the salad for 100 list on the plan for 100 page for amounts and the food bar article for arrangements and ideas. The taco bar page will also give approximate amounts for 100 servings of many toppings. Soup or baked potatoes are excellent side dishes for fall salad lunches.

Nan, Smoked picnics are the smoked shoulders, like hams only the front legs and less expensive. Simmered with onions and celery they make a terrific broth, and you cook till the meat just shreds, shred it while removing bones skin and excess fat and return to the broth. It will cut down on the amount of sausage you need, too. Yes the broth base can be made ahead and refrigerated, but pour it into containers less than 4 inches deep, or it will satrt to sour before it cools.

One formula that is used by some caterers:

If the event is only hors d'oeuvres (with no meal to follow) then serve 5 hors d'oeuvres per person for 1st hour and 3 hors d'oeuvres per person for subsequent hours.

If the event includes a meal, then serve 4 hors d'oeuvres per person for 1 hour prior to meal.

From the number of hors d'oeuvres you are making, it seems that your party is hors d'oeuvres with no meal to follow, therefore follow the first formula and you will have plenty of food.

Adrian, if this is a cocktail buffet in place of a meal, I would recommend more food: 6-8 per person the first hour, at least 4 each additional. Since you are serving an array of highly attractive foods, be aware that people are likely to try one of each, even if only there for an hour. When served in place of a meal, you need to look at 1 to 1 1/2 pounds per person...

Adrian, this is a very complicated menu for 150 people. It is professional level catering and cannot be done in the home kitchen or by an inexperienced caterer, and your not knowing how to estimate it suggests that it is too complicated for you. For example, there are too many oven and fried items for the home kitchen.

Estimating this level event is considered a professional service. The usual fee for from scratch estimates for this type menu (just the estimate and shopping list) is about $150!

If you are dealing with a caterer to obtain the dishes, they should be able to give you accurate estimates for the amounts. If you want to do it yourself, you need to reconsider the menu. You can email me at the contact address at the bottom of the page if you want to discuss it further.

Palm sugar
Jane, palm sugar is a paste or syrup boiled down from the sap of palms or coconut trees, and there really is no exact equivalent. It is also caleed:

# Burma: jaggery, tanyet;
# India: jaggery (raw cane sugar), gur (date palm sugar);
# Indonesia: gula jawa, gula aren;
# Malaysia: gula melaka; gula anau
# Sri Lanka: jaggery, kitul-hakuru, tal-hakuru, pol pani;
# Thailand: nam taan pep, nam taan bik, nam taan mapraow

You could try treacle/golden syrup or dark corn syrup, depending on the recipe. Your best bet is to find a local oriental grocery, or order it online, or ask at a Thai restaurant if you might purchase a small amount.

For equivalent sweetness, if the recipe calls for a quantity of palm sugar, use a mixture of equal parts maple syrup and either soft brown sugar or black sugar (depending whether you desire a lighter or darker-coloured result). Measure the mix as called for in the recipe.

I always make 1 patty and 1 dog for each person. Usually there is some left, but I don't run out, and the grilled items do freeze for a taste of summer later. Or the cooked patties make good chili if crumbled up.

Rosie, if fresh, you would lose almost 1/2 in cleaning and trimming. If frozen and ready to cook, 5 pounds is plenty for 20 people. Have a wealthy New year!

Michele, do 40-45 servings of each meat 1/4 cup gravy or sauce for each serving. For exact amounts for the meat and potatoes, vegetables and rolls, see the plan for 100 page and use 3/4 for 75. Mardi Gras Dinner
I am cooking an Authentic Cajun dinner on Sat. Feb 2.08, We will serve 250-280 people. Linda, what I meant by make an initial estimate is, decide how many people's worth of each type food and make an estimate of what you will need.

I can't help you on how many people will want gumbo versus Jambalaya, and I can't tell if you know that both these are usually served over white rice, with soft Italian style bread on the side, or if you know that red beans are usually an entree over white rice, with sausage; dirty rice is a typical cajun side rice, but would not usually be served with gumbo, for example. Salad and usually a vegetable would also be served. If you can tell me HOW MANY servings of each dish you want, I can try to help you; but I can't take the responsibility of doing your shopping list when the total needs are so unclear.

You must allow AT LEAST 1 pound whole raw hog per person, so you really need 2 hogs. It is much simpler, and usually safer, to do fresh hams and shoulders.

I have been asked to prepare appetizers for approx 100 teens. This will be prior to their sit down meal (provided by someone else). They will be standing in a reception line and also having pictures made during this time as well. They have asked for a hot drink or some kind, and an asst of other items. With teens, I would go for mulled cider with plenty of cinnamon and spice as the hot drink, about 15-18 pounds each cubed meats and cheeses on toothpicks, 2 of the fruit trays for 25, a gallon or so of olives and pickles and 4 recipes of the make-ahead seven layer dip:

If oven space is available, add one hot hors d'oevre, such as mini quiches, bruschetta or spanakopita.

Robert, for the fruit see the fruit tray page, look at the tray for 25, and multiply to your desired number. There is a very extensive list of other fruits giving quanitities so you can exchange.
Two pounds whole chicken makes 1 pound chicken meat, which is 2 cups. On the sandwich event page and the plan for 100 page you will find guidelines on amounts of chicken salad for 100 in various events (reception, luncheon, sandwiches, etc.) Using your prefered recipe, figure out how many cups you need to make the required amount, convert to pounds, then to pounds whole chickens. Basically, though, 1 pound whole chicken makes 1 cup chicken meat.

Good choice, way less fat than bacon.

Locally, we can get Johnson Bros spiral cut ham ends and pieces for under $2 per pound, this is excellent ham just perfect for frizzling up for breakfast, omelets, etc. It is mostly slices that are not quite perfect enough for deliuxe packaging. It comes in a vacuum sealed bag, about 3 pounds per bag.

BJ, brisket is a fatty meat that shrinks, I allow 1 pound raw for each 2 adult people. 3 kids under 6 are 1 people, 2 kids in the 6-12 range are 1, 3 teens are 4.

Amy, allow 2 mini burritos as appetizer-level, then you want 1 pound ready to eat beef for each 3-4 people PLUS 1 pound ready to eat chicken for each 4-5 people. People eat more, and some of each, when there are multiple entrees. If you add rice and beans, you can use the lesser amounts of meat and they are easy for this size group- one electric raoster of each- see the borracho bean recipe in beans for 100.

Since I have posted all my quantity tables, I ask people to do an initial estimate, post it, and let me check it for them. Your potato salad, mac salad are covered on the plan for 100 list.

The three meat mix for self service is harder to estimate, I would do 50-60 leg quarters cut up, 100 hamburgers and skip the hot dogs. Or do vegetarian dogs for the non-meat eaters in the group- in a group that size there will be some.

Beer drinkers tend to drink 3 cans each over about 2 hours. For 5 hours you need to add about 2 more cans per person.

Beverages are OK. These days a lot of people add a couple of cases of bottled water, especially for summer functions.

Basically he need to end up with 18-19 gallons of gumbo, plus the rice for 250 people. The rice is about 7-8 pounds raw for each 100 persons. The roux, works out to about 1/4 cup per serving, but the rest depends very much on the recipe he plans to use. Do you know what recipe he plans to use?

We are doing our first fundraiser for a newly started Little League Program. We will be serving BBQ Chicken halves. We want to serve snaps and potatoes with a homemade taste to it. We are selling 1,000 tickets. How much potatoes, seasoning, etc does it take for boiled or stewed, buttered potatoes. How many cans of snaps and how to season to make taste homecooked? We'll need tea quantities too. We'll also need a lot of prayers. We have never done such a task. Don't know how much can be done the night before and how to store the potatoes so they won't turn dark. We can go with can snaps but do not want canned potatoes. We also need a lot of prayers.

In addition to the at-home preppers, it takes about 25-30 volunteers day-of to do this. Read the wedding dinner article for help with planning. Have EVERYONE who is helping, read the food safety articles.

Allow 35-40 pounds potatoes per 100. Baked seasoned wedges (dipped in oil and seasoned flour and sprinkled with paprika for color) are a simple way to do popular potatoes that will hold, can be done ahead and reheated and don't turn colors.

For generous beans, you want 6 #10 cans per 100, for modest portions on served plates, you need 4. See this great recipe for something a little different:

Tea is covered on the beverage planning page. Have sweetened and unsweetened. The pink stuff is the least expensive artificial sweetener.

Adding a served dessert (dump cake or cobbler would be my plan) is a way to make the meal memorable.

Where will you prepare this? Have you checked on temp health permits? Some states require them for events this big. Have you checked on single event insurance? If someone claims a bad effect from the food, your group could be closed down by a suit; the insurance can probably be handled by whoever does the insurance for your league.

Potato wedges tossed with seasonings and oil and baked
Yield: 6 servings
Ingredients:

6 medium potatoes (2 1/4 to 2 1/2 pounds)
2 tablespoons oil
1 teaspoon garlic salt
1 teaspoon garlic powder
2 teaspoons onion powder
2 teaspoons chili powder

Optional ingredients:

cayenne pepper
chives
dried parsley
grated Parmesan cheese

NOTE: to get a coated type effect with less fat, cut the potato wedges into milk, and mix 1/2 cup flour into the spices before using them to coat the potatoes.

1. Scrub potatoes and rinse under cold water. Pat dry.

2. Cut potatoes into wedges or thin steak fries (about 6-8 wedges per potato).

3. Using a large mixing bowl, toss potatoes in oil.

4. In a small bowl, mix dry ingredients thoroughly. Pour over potatoes and toss to coat. ALTERNATIVE: if doing many, put the spices in a plastic bag and shake the wedges.

5. Preheat oven to 400 degrees. Spread potatoes in a single layer on an ungreased non-stick* baking sheet, or a greased regular sheet.

6. Bake for 10 minutes, stir and loosen, then bake an additional 20-25 minutes, or until potatoes test done with a fork.

7.Sprinkle with salt to taste. Can garnish with a sprinkle of Parmesan or chopped parsley.

If you have to hold them, for example overnight, you do not want to use fresh pineapple, it interacts with the yogurt and causes it to thin. Peaches would be a much better choice.

You want 2 tablespoons granola, and 2 ounces fruit for each 6 ounces or 3/4 cup yogurt.

For the meats, 5 ounces cooked ready to eat beef PLUS 3 ounces ready to eat ham per person, which is 2 pounds raw boneless beef for each 4 people, PLUS 2 pound heat and eat ham for 7 people. Mashed potatoes, I make 35 pounds of potatoes for 100, so you would want about 28 pounds.

Gladys, 30 ounces is not a serving, it is a quart, three large servings by my recipes. Basically meaty chilis start out with about half the total desired amount in raw meat, which is a pint, which is a pound. This loses about 1/4 in cooking, the rest of the quart is everything else.

i have an urgent need for info regarding food for 50 people. we expect 22 men and 22 women and around 6 children. Some of the men will certainly eat more than the ladies. Kara, as I have explained before on several threads, this board is for family type cooks, not paid catering. There are lots of reasons, but one important one is that the paid caterer is legally liable for ANYTHING that goes wrong at an event; incorrect storage and transport, food poisoning, injury to workers or guests, unhappy results with the customer refusing to pay, etc; you need event insurance for this. Also, there are very stiff regulations in most states, such as yo can't prepare the food at your house unless it is a licensed commercial kitchen.

Also, you need legal contracts specifying foods and amounts, who takes home the leftovers, etc. For help, go to the catering board at chef2chef.com.

That said, all these foods are covered in the plan for 100 page, the appetizer planning page, the sandwich planning page and the fruit tray and vegetable tray page. You can easily prepare a good estimate using these pages, remembering to add 10% for self service.

Think of the group as 2/3 of 100 and use the planning tables and the bbq and brisket page to help you estimate. You are serving two entrees, so you need to have more than 1/2 of each, so people can get their first choice- you want about 40 servings of each chicken, plus 30 burgers plus 30 sausages or hotdogs. You will have some left, but this is the only way to give everyone their first choice.

For 100 people you would want a total of 10 gallons of beans and salads, so for 60 you want about 7-8. Maybe 2 gallons each?

Basically, this is like making mac and cheese with ham, where you use gravy and beef instead of cheese sauce and ham. You want 16-18 pounds of noodles and and equal amount of beef, plus the gravy. It will take 2 roasters to hold this much, if you use roasters.

The cold cut trays are simpler and pretty. It would be nice to have a really big pretty fruit tray.

Check the sandwich event page for help on the sandwich amounts, fruit tray page and veggie tray page for fruits, veggies, and relish tray (for example, you would use 3 times the fruit tray for 25 and the relish tray for 50-60 as given would be perfect for your event). Post your estimates and I will check them for you.

For 20 people, this is a lot of food, even given that they are starving and drinking. I would skip the tuna completely, just make sure the fruit tray was the serves 16-20 size, and MAYBE add a tray of 60-80 "bites" of something, such as bruschetta, spinach Parmesan squares, stuffed cherry tomatoes, or some little starchy/veggie bite thing. Get the blackened tuna when you and an appreciative friend can really sit and enjoy it as a meal.

If this is dinner, they will eat 2 sandwiches that size each, and 1 pound meat will make 4-5 sandwiches. Salads, 1/2-2/3 cup each, for example, you use 4 4 1/2 gallons of poato sald for 100 people, but only about 3-3 1/2 gallons slaw. For high school for desserts I allow 1 of each type up to 4 including the cupcakes, making all of them about the size of the mini cheese cakes. The 1/4 sheet cake cuts 15 teen size pieces (it is a 9x13 size) if a single layer, about 24 if 2 layer. For this large a crowd I would get two layer half sheets, and I would get three or four.

Ms Requel this is a page for family cooks trying to expand for large groups, church, reunion, etc. I recommend chef2chef.com for people interested in pro catering. But I or anyone in the business will tell you that you need 2-5 years pro in the business working for someone else before you open your own business catering, if you don't want to fail. It is a tough business and one bad event can ruin you- or an accident for the staff or guests, or food poisoning. You need a business plan, capital to last 2 years a licensed professional kitchen (you can't cook for sale in your home kitchen), legal contracts with your clients, INSURANCE, business and health licenses; it is a massive undertaking and very hard work.

Specific fruit salad serving 350
High School grad party estimating 350 served: Wish to serve fresh fruit salad with following 5 fruits:
1) fresh pineapple chunks
2) red grapes
3) green grapes
4) cantelope
5) strawberries

Note: this salad is among other food items being served. Those other items include:

1) chicken wings
2) subs
3) fresh veggies and dip
4) chips and dip

I figured you would want to know that before you estimated fresh fruit amounts for the fruit salad!

Basically, non of the other foods are competitive types for the fruit. I would do 10-12 times the amounts for the fruit tray for 25 on the fruit tray page, substituting cantaloupe pound for pound with the other melon. I would suggest trays, not mixed salad, easier to eat (no bowls and spoons) and more impressive on the table. Consider a creamy yogurt dip on the side with vanilla, honey and mace- 1 cup for each 7-8 people.

Vanessa, this is a site set up so you can use my tables to make an estimate, post it, and I can review it for you. For example, I can't do a good entree estimate without more information; I don't know if your roast beef is pot roast or prime rib, you have three entrees for 60 people, when 2 is much more usual and much easier to estimate. The side dishes are an unusual selection in that there are three major starches for 60 people, which means you will have to make a lot extra to make sure everyone gets their first choice; plus you are also having potato sald, which is a very heavy choice for this menu.
It is also very helpful to know the type of crowd (age, etc) and the event.
You may want to rethink the menu a little and simplify, then read the table instructions for meats and the other foods and start with an estimate, so I have something to work with.

It's kids, so about 12 pounds, Lean gound beef has much less grease, not so much draining. If you have to add in staff you might want a bit more.

Pasta primavera is a last minute dish, requires continuous cook attention and doesn't hold well at all.

Have you considered a chilled pasta primavera? Very appropriate for a summer beach wedding and all done ahead of time. If you like the idea, I could whomp you up a reception size recipe. Here is a sample family size recipe to try on your bride and groom (it would make about 8 side servings):

PASTA PRIMAVERA

3 cloves garlic, minced
1/3 c. pine nuts or sliced almonds
3 tbsp. olive oil
1 1/2 c. sliced broccoli flowerets
1 1/2 c. fresh or frozen snow pea pods
1 c. sliced zucchini
1 c. frozen green peas
10 lg. fresh mushrooms, sliced
6 fresh or frozen asparagus spears, cut into 1 inch pieces
1/4 c. chopped fresh parsley (I use Italian flat leaf
2 tsp. dried whole basil
1/2 tsp. salt
1/4 tsp. pepper
12 cherry tomatoes, halved
1 (12 oz.) pkg. premium Italian (durum wheat) spaghetti
1/3 c. butter
1 c. whipping cream (DON't substitute)
1/2 c. grated Parmesan cheese

Saute garlic and pine nuts in hot oil in a large Dutch oven 2 to 3 minutes or until pine nuts are lightly browned, stirring frequently. Add broccoli and next 9 ingredients; cook, stirring occasionally, 5 minutes or until vegetables are crisp-tender. Stir in tomatoes. Chill vegetable mixture at least 1 hour.

Cook spaghetti according to package directions; drain. Rinse with cold water, and drain.

Melt butter in a large saucepan; stir in whipping cream and cheese. Cook, stirring constantly, until cheese melts. Add spaghetti, and toss gently. Cover and chill mixture at least 1 hour. To serve, spoon vegetable mixture over spaghetti, or toss gently.

You can also use twists or radiatore for the noodles and stir in additional vegetables, such as 1/2 red pepper, diced

1 6 ounce can sliced black olives

And of course you can substitute fresh chopped basil for the dry with good results.

Susan, it depends on what else is served, but assuming this is teens you need 10 pounds of corn chips and 2 gallons of dip per 100 people.

Rachel, you need 430 pounds, which means at least 3 full time roasters hired. This is not a particularly cheap or practical meal to self cater for this large of a group.

30 is actually a small party. Get 1/3 the amount of salad for 100 on the plan for 100 page. Adults will eat about 1/2 a 12 inch pizza, teens about 3/4, tweens about 1/3. You might check with your local pizza buffet on the assortment- just make sure there are a least 2 plain cheese and some pepperoni.

Eith fruit cobbler or dump cake, 3 9x13 pans, plus a couple gallons of vanilla ice cream and some syrups for quick sundaes would be fine with this.

For the meats, people eat a lot in picnic type situations, this is what I plan for: 1patty PLUS 1 piece chicken PLUS 1 dog for every single person. Don't open all the dogs- they are what you are most likely to have left over. See the sandwich planning page for help on sandwich toppings and condiments.

That is less pork than I would make. People will eat the winglets as appetizers- you want 4-6 per person. About 12-15 pounds fillets or pieces of fish. I would add one or two more pork roasts- it is popular and you will lose almost 50% to bone and shrinkage.

I'm serving a birthday party for a 75 year old man with 50 to 60 guests (10 of which are children), the menu consists of fried catfish, red beans, hushpuppies, french fries and slaw. Claudia, what is the menu, cooking and refrigeration facilities? To serve this many people takes 4-5 cooks, plus about 30 servers to set up keep the tables filled and clean up. Hi, Kathy,

Fortunately for you, each of these items is discussed in detail in its own article. The buttons for fruit trays, veggie trays, and beverages are at the top of the main cooktalk page. The amounts are for 100; you would use 3 1/2 times that amount.

For the cheese, if that is the only protein food available, allow 2 ounces per person (1 pound for each 8) if sliced, or 2 1/2 (1 pound for each 6-7) if cubed. Part of this can be cheese logs or spreads; you go by weight. If you need crackers, 6-7 pounds per 100 people.

When you do the beverages, be sure to have a sugarfree choice alternative. In a crowd that size you are sure to have diabetics and low-carb folks. Dinner coffee service would be a good choice (it's on the beverage page).

The amounts in my tables assume it is about 2 hours and not over a meal time. See the appetizer planning page for a discussion on how timing affects quantity.

For 100 people, I would use the dressing guideline in the salad section of the plan for 100 list.

3 pounds of salad is a tiny amount for 100 people; 18 would be the usual amount; for only 3 pounds, you could use 8 ounces of dressing of each of the 3.

2 tablespoons (1 ounce) per bagel for the cream cheese.

The veggie tray page tells you how many pieces you get from weights of various veggies. You can select your 4 pounds from this. But again 1 1/2 to 2 ounces per person is the more usual amount.

Tia, this is very easy to make yourself and since you are providing so much of the setup yourself including the ice and the alcohol, I would suggest you consider making it yourself. As long as you are able to keep all the ingredients cold before mixing, you can make a great punch.

As the pricing, 12 gallons is 24 liters, 12 2 liter or 1/2 gallon bottles, and the most expensive item they are supplying is less than $2 per half gallon. So you are looking at 150 for something where the food cost is less than 50. This is a normal catering markup. You can save yourself about 100 by mixing it yourself.

No, it takes 50 pounds boneless raw to serve sliced beef to 100 people. If you ground it for meat sauce, chili, etc, it would be OK, but it is even short for meatloaf (30 pounds lean, 34 regular ground beef).

This is for a graduation party that will run from 3 p.m. until 8 p.m. and whatever stragglers stay.
I am having: sliced roast beef in broth, 4-15# turkeys deboned and in broth, hot dogs and maybe polish sausage. potato salad, cheesy potatoes, cole slaw, fresh fruit(?), cake.

Hi, Tami,

Potato salad, cheesy potatoes, cole slaw, fresh fruit(?), cake are all covered in the plan for 100 tables, the dessert plan and the fruit tray article, you would just do 2 1/2 times the amount for 100.

sliced roast beef in broth, you need 80 pounds ready to serve
4-15# turkeys deboned and in broth, makes about 60 cups of meat= 30 pounds, you need about 50
hot dogs and maybe polish sausage, the Polish sausage is a much better choice, allow 1 per person, but don't cook them all ahead. You will use anywhere from half to all depending on the crowd.

red bean- 8 lbs w/ smoke sausage 3 lbs- about 100 modest servings- I might go 12/5
rice- 12 lbs- fine
pulled pork- 40 lbs- if this is raw weight it will make about 120 sandwiches, if cooked, about 160
rolls for pork- 400- no more than 200- some people might make meatball sandwiches as well
jambalaya- 12 lb - sausage and shrimp in it- you could run out- this is only about 1 1/2 gallons. I would probably skip it, you have a lot of food.
shrimp fettuccine- 30 lbs- I would go 40 if I skipped the Jambalaya
asst sandwiches- 300- not necessary, they have to be made the morning of and the leftovers aren't usable.. You could put out some bowls of assorted fillings (tuna salad, pimento cheese, good peanut butter swirled with a good jam), plus baskets of good bread.

deviled eggs- 10 dozen-OK
veg tray- 4 tray carrot broccoli cauliflower- need about 25-30 pounds

potato salad- 30 lb- I would do about 50
pasta salad- 20 lbs- I would do about 30

chicken tenders- 400
meatball- 500

These will be eaten mostly as appetizers, this is plenty.

Cake and bars; enough cake for a small piece for everyone plus 1 of each bar (small cuts, 2-3 bites) up to 4 different flavors.

At least 1 pound wings for each 3 person, plus 1 pound ready to eat pulled pork for each 4 persons. I would probably make an extra 10 pounds and leave frozen until I saw how things were going.

See the spaghetti supper for 50-60 at the bottom of the spaghetti page, do 6-7 times the amounts. However I STRONGLY recommend that you do baked pastas (lasagna, ziti, etc) for this dinner; loose pasta for this many people is a cooking and serving nightmare..
For 300 people, you will need at least 6 serving lines, with the beverages and desserts and appetizers separate.

French fries are VERY unpractical for this size group, onsider other choices. And it will take about 8 people at the grills and kitchen and another 16-20 setting up, serving and cleaning up plan for this.

Good Afternoon Ellen. I've looked around the site to try to figure this out myself, however I am stumped. My niece is getting married and we will be preparing the food ourselves. If the wedding is immediately preceeding (1 PM), many people will eat before they come, which helps reduce the amounts. Don't make the sandwiches ahead. You will need 8, yes eight, serving lines to feed 400 people. Ypou will need 4 days to prep it. You will need at least 30 people (experienced, and not wedding party members) to set up, serve, and clean up this size event. You need at least a pro manager; most of the work needs to get done while the wedding is in progress.

I do not recommend self-catering an event this size unless you have a lot of experience with groups over 100.

That said, you want 3 ounces ready to eat ham, 3 ounces ready to eat turkey, 2-3 ounces breads/rolls per person. Use the condiment table on the sandwich page to calculate 4 times the amount for 100.
Hot dogs, allow 1 large or 3-4 small per person
Meatballs, 3 ounces per person
You need cheese, 2 ounces per person

pasta salad, baked beans, potato salad, use 4 times the amounts for 100 on the plan for 100 page

Fruit salad, I suggest fruit trays, look better, keep better, and the leftovers are more usable. See the fruit tray page, do 4 times the amount for 100.

Canned potatoes aren't nearly as tasty as fresh.
I allow 35 pounds small reds per 100 people if I am plating, add a few pounds if it is self serve.

You need 12 quarts=3 gallons cut up fruit or fruit cocktail for small fruit cups, 16-18 quarts for slightly larger.

I have been catering and event for 8 years but this year it happens to fall on Good Friday (no meat for most).

I plan to cut back on bologna and ham and increase the tuna because of Good Friday but not sure how much would be proper.

These people will arrive at location around 9 AM and eat around 11:15 AM. There are 177 adults and 75 6 year old children

We have bread donated it comes in a variety of bulkie rolls and sliced bread. Tuna sandwichs are premade morning of and cut into 1/4's. Deli meats are self serve.

In the past I have made:

4 lbs Bologna

1 Gallon of Ranch 1 Gallon of Italian (extra is saved for event that follows shortly after)

Mustard – 2 24 oz bottles
1 Gallon Mayo – use for mac salad, tuna, serving

Chris, the amount depends to a large extent on what else is being served, as it can triple if there is little else; but for 500 people, with other appetizers, I can make this:

Simple tomato artichoke bruschetta for 500

Diced pear (Roma) tomatoes, well drained 70 cups (about 4 1/2 gallons)
Chopped canned or frozen artichokes 25 cups (1 3/4 gallons)
Garlic, minced 35 cloves
Thinly sliced red onion 9 cups
Kosher salt 3/4 cup
Freshly ground black pepper to taste, about 1/4 cup
other green herbs as available (oregano, Italian parsley, etc)
Freshly chopped chives to taste for garnish
Fresh goat cheese for garnish 10 cups
Baguette, thin-sliced and toasted or grilled, 35 pounds

Combine drained chopped drained pear tomatoes, choped artichokes, crushed garlic, red onion, salt and pepper and selected herbs except chives in large mixing pans. Set aside.

You do know to toast/grill the bread both sides, brush a little top grade olive oil on it before spreading the tomato (it will take about 5 cups); blanch/skin the tomatoes if the skins are tough? Slivering up the green herbs (basil is lovely, of course) is called chiffonade. Many people use a little top quality vinegar in the tomato mix.

First, he goes to the dessert planning page and figures out how many pies he needs (this will depend on whether he decides to make 8, 9, or 10 inch pies); then when he knows the number of pies, he can use any sweet potato pie recipe and just multiply.

Then, if he wants to show off, he can convert the results to the largest measure, for example, 16 cups of sugar = 4 quarts = 1 gallon.

Help, we are holding a pig roast (150-160) 2 smoked salmon, side of beef (20 lbs) and 10 doz hot dogs for kids (30+/-) we can have hot dogs for the kids, but don't need even half this amount, do you agree? Yes, you need at most 6 dozen hot dogs, and probably not that; 4 would do it.
To fill out the salads, you could add about 2 gallons each 3 bean salad (really good with corn added), broccoli salad/slaw, cherry tomatoes with fresh mozzarella and basil (caprese), Texas caviar, tabouli and Greek salad from my salads that hold section. 4 gallons potato, 6 pounds dry pasta for the mac salad, 20 pounds cabbage for the slaw, and the veggie trays, skip the plain tossed, and you will have an awesome spread which can be made ahead of the day.

What is the fastest way to feed 600 people? Is it with buffet lines serving on either side. Would it be better to have 3 or 4 tables? We are serving Grilled hamburgers/hotdogs(each will put their own toppings on), beans, chips and drinks.

One double sided table feeds 50 effectively, maybe 60 if there are no choices to be made (single entree, etc). Hot dogs and hamburgers are just the opposite, way too many choices due to the toppings, and it really slows the lines. So you are looking at 10-12 serving lines (16 foot table, about 100 square feet for table plus lines).

Lisa, this is way bigger than I usually recommend amateurs taking on, and is a massive undertaking whether plated or self serve. We are talking 10 cooks, 60 servers, etc. Are you having it catered?
Also, I don't recommend a menu until I know what the kitchen and serving set up, and the budget, are. So you need to give me more information.

See the spaghetti page, you need to make enough for a main course for about 85 people (that's 5/6 of 100, if you are good at fractions.

Or see the baked spaghetti casserole in the budget entree section of Big Pots, much easier.

Also, bread sticks are expensive. If you have an oven or electric roasters available, do 12-14 pounds garlic bread instead.

My servings are American size, and that is more than you need for any other population. This is what I would suggest for you:

For the chicken, assuming you get whole chickens, 1 chicken for each 8 people.
For the rice, around 10 pounds dry per 100.

You would do the onions, vegetables, ghee and spices according to the rice.

Eddie, for beef, depends on the dish, see the plan for 100 page and multiply the correct one by 15. For the veggies, about 330 pounds of raw cabbage heads and 34 pounds raw per 100 for the squash.

Ash, you want about 8 pounds per 100 for full servings of oatmeal, and I suggest you look at the baked oatmeal recipe on the Big Pots page. It's delicious, and much simpler than trying to boil that much cereal.

Those smart folks at Harvard use this- it feeds about 90. I would make it in a pan with the sauce already over the fish, to get a stewy effect.

40 pounds catfish fillets (cut in 6-ounce pieces)

2 ounces olive oil

In sauce pot over medium heat, sauté onions and peppers in olive oil for 5 minutes until soft. Add next 15 ingredients. Bring to a boil. Reduce heat. Simmer 45 minutes. Dissolve cornstarch in water and add to saucepot. Add fresh thyme and red pepper flakes. Simmer 10 minutes and purée sauce.

Plating

Spoon sauce over fish and garnish with scallions.

For regular neighborhood parties, I suggest 1 burger and 1 hot dog per person. You probably want to have less- so start 600 burgers and 300 hot dogs and serve 2 hot dogs as one serving.

I would definitely add potato salad (28 gallons) or chips (700 bags), a piece of fruit, and beverages- at least lemonade and iced tea.

I am really struggling. For an upcoming wedding, I am serving 315 people the following meal: Fruited mixed green salad, chicken tetrazzini, glazed pork tenderloin, sauteed haricot verts, mashed potatoes and garlic bread. They are NOT using a separate salad place, so everything will go on one dinner plate. I have looked over your quantities, but none of it seems to be what I need. Tara, a wedding reception really needs an appetizer plan as well, and here is why:

A self-catered buffet is a real challenge to the organizers, and things don't always come together as smoothly as hoped. By planning and setting up an appetizer area or "nibble table" which is ready when the guests begin to arrive, the cooks and servers have time to complete the arrangement of the dinner buffet. This is especially critical if there are children among the guests, or there is a wait before dinner, as at a wedding reception.

This does not have to be complicated. Three items, plus a punch, or two if one is alcoholic, are sufficient. Typically, include a fruit tray, a cheese tray and an attractive dip or spread; or you can go with a dinner theme such as TexMex with chips, salsas, Texas caviar and guacamole; Italian with bruschetta or antipasto; maybe shrimps or other cold seafood, if budget permits.

One appetizer service area is needed for each 100 guests.

This is a huge crowd, requiring about 4-5 kitchen folk and 15-18 people out front to set up, serve, and clean up a party this size.

Also there is no provision for vegetarians, and with 300+ guests there will be some. Would you consider an alfredo pasta without meat?

Thank you for the advice. When I meet with potential brides, I always highly suggest hors d'oeuvres (either buffet, stations or passed). This bride is not doing pictures at the church after the wedding (they are doing them before) so she did not want the extra food or costs. Very few children will be in attendance. She also did not want a vegetarian option. My question was trying to figure out the portions and amount of food to prepare. The plate size she is using is 10.25 inch and she does NOT want a separate salad plate. Since they have to put all the food on one plate, there will not be room for huge portions. I want to make sure I have plenty of food; however, I don't want to have so much that we have excessive waste and leftovers. Thanks so much!

Emily, this is a completely unrealistic budget; you need about $6 per person to plan a Christmas meal. If that is all the money you have to work with, plan a midafternoon tea/reception with lots of Christmas cookies, punch, coffee, and tea- and get lots of cookie donations. If you want help with that, write back and start a new thread.

Chelsey, will there also be potatoes, dressing, mac and cheese or other starchy sides? For holiday feasts, I often count sweets as a veg, 4 #10 cans per 100. With 700 people, you can reduce that total 10%- economy of scale.

I'm planning a fundraising luncheon for 300 people. Could you give me an idea how many pounds of shrimps, rice, broccoli I need to buy??
Also, what is the best way to cook shrimps?? I'm planning to have shrimp saganaki which is with tomatoe sauce over rice. Thank you !

Chrisy, shrimp saganaki is usually served straight from the frying pan, because it does not hold very well and cannot be reheated at all. In addition, you have to provide a second entree choice for any non-shrimp eaters or vegetarians. Asa fundraiser, shrimp is not low cost.

Also, I need the whole menu and the type of event, age/type of crowd, whether it is buffet or plated.

The fundraiser is for a Greek School which is part of a church. We will serve after the church services on Sunday. The problem is that is a fasting period for orthodox and we can only serve items with no meat or dairy products. Shellfish is allowed. This is something the PTA does for years. Usually they offer shrimps in tomatoe sauce over rice. I thought that if I prepare the sauce in ahead all I need to do is adding the shrimps for 5 minutes at the end. Not sure how good this will hold thought. The did it in prior years and it was ok sometimes shrimps were over cooked. Some people suggested to do something a little different and do shrimps over linguini but I think that is more risky. What do you think?? Usually we charge $15 per plate. Including broccoli, salad and desert. I would appreciate any suggestions you might have. Greeks are tough crowd to please so I feel I don't have too many choices. Thank you so much!!!

What about the classic Mushroom & Onion Stew - Stifado me Manitaria? Maybe with meatless stuffed grape leaves, stuffed cabbage, or other stuffed vegetable, and/or classic white bean or chickpea soup, you would have a elegant but strict fasting menu, at a lower cost than the shrimp, and holding better, too? This is a very tough estimate, so I will just tell you what I would do.

May I suggest chicken nuggets instead of sandwiches, less waste?

chik fil a nuggets, about 1500
pizza slices, one full slice per kid or 3-4 squares per kid, depends on sizes of pizzas
qdoba build your own burrito, best choice here would be to have premade, cut in half and allow 1/2 per person
individual bags of chips, 1 pound (16 bags)per 10 kids
chicken wings, they will eat all available, up to 1/2 pound per person. At least 3 pieces per person

How much food to serve 260-280
Hi there:
I'm planning a Birthday party and will be having a 10:00pm buffet for about 260-280 confirmed guests. Even though some may not eat, or only nibble a bit, there are LOTS of HEFTY guys at this party that know how to eat. I have my menu set up and I have LOTS of friends volunteering to bring whatever dish I want to assign them. Here is my menu, can you please tell me how much of each I should get?
- Cheese platters (HELP!!)
- Crackers (don't worry I'll just buy lots of boxes)
- Pickle Trays (HELP!!)
- Veggie Trays (HELP!!)
- Square Pizza Slabs (cut into 32 square pieces)
- Potato Salads (HELP!!)
- Pasta Salads (HELP!!)
- Various Wraps (instead of sandwiches) (HELP!!)
- Roasted Pig (friend is doing this, enough for 200)
- Buns for Roasted Pig (probably get 300)

Tasked to feed 500
We have been asked to prepare a BBQ dinner for 500-700 people. We will be serving hamburgers and hot dogs. We plan to boil the dogs and precook/grill the burgers. What time would you estimate we begin grilling? How many cooks should I plan to have?
We have a large commercial kitchen. I figure three runners, 3 cooks, and 3 prep people along with site hosts and line monitors.

Lynn, 500-700 is too big a range to estimate. Also, I need additional info.

What type group?
How are you serving? If it is over a limited time, you will need many more serving stations, kitchen staff and servers than you indicate here.
What type grills and how large?
If you are pre-cooking the burgers, what about doing meatball sandwiches instead? Much simpler, hold better, better food safety, and no more cost.

Usually, 2/3 beef, 1/3 chicken, 25 pounds raw boneless per 100, so you are looking at 85-90 pounds

OK, unless you are being paid big bucks, by which I mean 20+ per person, and ESPECIALLY if this is volunteer or at cost, you are going to insist on menu modifications and help. The strawberries alone are a 2 person job.

Chicken Strips- 1 pound per 6, get small ones, dipping sauces, 1 cup per pound (about 1 gallon per 100)

Turkey/ham sandwiches, do these as tea sandwiches, also, 800
chicken salad tea sandwiches, 400
pimento cheese tea sandwiches, 300 pieces
veggie pinwheels 300 pieces if with cream cheese and very nice
ham pinwheels 300
ham & Swiss sliders 300
OK, you know this is too many sandwich choices.
Assuming teenagers, you want 6-8 pieces per person, about 6 per girl and 8 per boy.

sausage , Assuming these are the cheddar and sausage/bisquick type balls, 3 per person
lil smokies wrapped in bacon- No, offer in BBq sauce. Or meatballs in orange teriyaki- 10 pounds per 100, 3 quarts sauce per 10 pounds
pigs in a blanket- not unless you can get them frozen and there is a usable cafeteria style oven on site, if yes, 1-2 depends on size and other sandwiches

fruit tray- 2 1/2 times the amounts on the deluxe tray for 100, and consider putting these by the chocolate fondue II discuss below

veggie tray, 1 pound per 10, 1 cup thick Ranch dip per pound

cheese ball
cheese and cracker tray
10 pounds per 100, half can be spreads, logs, balls/ 6 pounds crackers per 100

dip and chips
6 pounds potato or 8 pounds corn chips per 100, 1 pint dip or salsa per pound

cookies
brownies/bars
You will want these cut small- cookies about 1 1/2 inch, brownies the giant ones cut in 4, about 2 pieces each per person

chocolate covered strawberries- strongly suggest no; a fondue with fruit and cake for dipping is a much better choice- not a fountain, as they will be dressed up, and bad things happen, see my chocolate fountain article. You can add marshmallows and put the cookies, fruit and bars near the chocolate- have 2-3 tables for this.
