I am cooking for about 160 people and wonder if and how you could freeze pasta and reheat? |

Pasta casseroles can be frozen if the pasta is slightly undercooked to allow for reheating, but not loose pasta, if you want good results. Casseroles must be 3 inches or less deep.
Pasta has to be frozen in a sauce or gravy, otherwise it gets really mushy when you reheat it. www.bhg.com/recipes/how-to/food-storage-safety/storing-cooked-pasta/. Small amounts can be frozen ad reheated in the microwave- you let the cooked noodles air-dry before freezing, thaw at least 8 hours, reheat covered in the microwave. |
