I have been assigned to handle a mother daughter banquet at my church. The menu that has been given to me is as follows, I am not to add any other dishes: Fried chicken (which is being ordered from a local diner by the piece, not lb, mixed), green beans, corn on the cob (mini ears-frozen), potato salad and rolls. We also have 3 desserts: banana pudding, peach dump cake, and apple crisp. There will be 158 adults, 35 kids ages 4-12, and a dozen or so 3 and under. The woman who placed the initial chicken order only ordered 210 pieces of chicken. I have always thought you should average 2 pieces per person. Will this apply here? And what do you recommend for other quantities? With such a small menu, I am somewhat stumped. |

mother-daughter banquet Fried chicken (which is being ordered from a local diner by the piece, not lb, mixed)- Some (many) of these pieces will be wings and legs; you need at least 370 pieces and 400 would not be too many if it is self service.
