We are expecting approximately 350 people for a graduation reception for the Senior Class. The parents are preparing the food (very small, rural school). We are planning on having a buffet (not sit down dinner) that includes sandwiches made on dinner rolls. We are using pork loin and ham. There will also be chicken tenders on the buffet as well as crackers with dip, crudite, fruit and desserts. How many pounds of uncooked pork loin do I need and how many pounds of ham will I need? |

Seniors basically inhale food. You need to add a starchy salad, potato or pasta, both can be made ahead, or they will eat a lot of sandwiches. If you add a starch, figure 1 pound raw pork loin per 4 plus 1 pound ready to eat ham for 5-6. See the sandwich page for fixings/ condiments. |

I forgot to include that we are having a mashed potato bar so that should work well. We are planning to buy spiral sliced hams with the bone in. How many pounds do I add for the bone? |

Subtract a couple of pounds per ham for the bone. Freeze the bones to make soup or beans while you are broke sending the kid to college... |
