Hello - I am planning a casual wedding dinner for 130 people, and have come up with the following menu. We will have mostly carnivores along with a few vegetarians, vegans, and one gluten-free vegan!! I would appreciate any comments you have on quantities or items:

You did good. Cupcakes are right, too. Double the butter, 10 pounds sour cream, at least 3 gallons BBQ sauce. Sandwich condiments, see the sandwich page. 2 rolls per person unless they are very large. Since you know you have some vegans, etc, how about providing tofu kabobs? 6 ounces tofu, pressed between plates to remove some water, marinated in (gluten/wheat free) soy sauce, cubed and skewered and grilled. Really popular with the vegan set... |

Ellen - Thank you for the response. Now I have a question about plates, forks, etc. For our 130 person buffet, we will be using compostable (disposable) plates and forks, knives, etc. We will have fabric napkins pre-rolled with a fork, knife, and spoon. I plan to have about 150 napkin rolls, to be picked up in the buffet line. Does that sound like enough? Also, how many buffet plates should we have for 130 people?

2 plates per person, plus one separate for the dessert table; complete additional spoon or fork for the dessert; a hundred extra forks. |

Hi Ellen -
For 100 people for "dinner coffee", you say: "Regular coffee, 1 1/2 pounds We will have coffee available after dinner, with dessert. When you say "1.5 pounds", is that for a 50 cup urn? If so, would you recommend a 50 cup urn of regular, a 30 cup urn of decaf, and a 30 cup urn of hot water for 100 people? Perhaps for 130 people, I should do one 100 cup urn of regular, one 50 cup urn of decaf, and one 50 cup urn of hot water? Also, 3 lbs sugar, 3 quarts half and half?

1.5 pounds makes 75 cups, 1 pound makes 50. Since it takes a minute per cup to brew the big urns, I would do 2 50's rather than a hundred of regular. You will have plenty if you do for 150. |
