Ellen - your website is amazing! I'm planning on buying already cooked fried chicken for 100 people from our local grocery/deli for my daughters graduation. Do you have any suggestions on how to keep the chicken warm and moist for about 4 1/2 hours? We're hoping to serve it from an electric roaster, but don't know what setting is best and how long it will stay warm and moist. |

Susan, it is not safe to keep it just "warm" for 4 hours; you have to hold it above 140. You keep it in the oven or roaster at 180 degrees preheated. You can cover with a clean, dry cotton dish towel to help keep moisture off the top of the chicken, and most should NOT be in the serving roaster, as this will be opened and the heat will not hold. |
