I'm helping prepare the food for a party of 150-200 people. I have found the info you have regarding the recommended amounts of beef. What would you recommend for amounts if we want to have beef AND chicken available? I'm guessing 75% of the guests would go for the beef.

The usual is 5 ounces beef plus 3 ounces chicken, ready to eat. For ground meat for tacos, about 1 ounce less of each.

Thanks for the info. Do you think I would be ok to cook the meat a week or two ahead and freeze.

Yes. but it affects the spices. Thaw in the refrigerator.
