Hi, I have people lined up to BBQ carne asada for my wedding reception. We had planned on them preparing all the meat and keeping it in warmers before the reception begins so that the buffet is ready to go as soon as we are ready to eat. Now I am being told it needs to be prepared on the spot as people eat so it doesn't dry out!! This would mean bringing a BBQ on sight, etc! What would you do?? |

Consider guisada, beef in gravy, which can be made ahead. Maybe with enchiladas as a side, along with the rice and beans. |

Thank you for the suggestion although we are pretty set on doing a carne asada taco bar. Would you say then that cooking it on sight would be the way to go?? |

Yes, carne asada is a grilled meat dish, and if you are going to have them, grilled on site is the best method. |
