I've read about how you can freeze potates, then thaw and reheat. I have a potato & snap pea in a sauce recipe that is served cold. Can this recipe be frozen and thawed without the potatoes getting mushy?

If the recipe is put together before freezing, I am afraid the peas will also get a bit mushy. Not reheating,

I freeze stuffed baked potatoes but when you reheat them you have to put them in a 400 oven or they will be soggy. Never defrost.

How do you freeze fresh boiled potatoes without
them becoming mushy???

Basically, they are going to be mushier than if you served them fresh. You need to use the lowest starch potatoes, that is red potatoes. Just barely cook through. They will be a bit firmer if peeled and cut up after cooking, not before.
