Hi, I'm wondering how many pounds of carrots and onions I should plan on for serving 250 people a chef salad, using approximately 2 cups of lettuce per serving. I also have 4 other vegetable toppings. Thanks, Deanna |

Neither carrots nor onions are usual toppings on chef's salads, and I definitely would not put onions on- many people do not eat them raw. That said, 3 pounds per 100 is what is used for the other veggie toppings, except tomatoes, which are about 8 1/2 pounds per 100. |
