200 adult guests business luncheon tur & ham sand on small dinner rolls 100 of ea. 1/2 lite 1/2 dark rolls 20 ea. of cuke/crm chse and 20 ea tomato & mozz. @ vegeterians baked beans/ green salad, 2 drssngs potato salad small fruit salad small veggie tray dessert split between sheet cake and cobblers ? is how do I figure amts of all things correctly?? TY |

If it is buffet/ self serve, this is not enough food. tur & ham sand on small dinner rolls 100 of ea. 1/2 lite 1/2 dark rolls I figure 3 per person minimum for the small rolls, 2 turkey, 1 ham 20 ea. of cuke/crm chse and 20 ea tomato & mozz. @ vegetarians OK baked beans/ 7 gallons green salad, 2 dressings see plan for 100, use 2x the amount for 100 potato salad 8-9 gallons small fruit salad- 3 ounces ready to eat per person minimum, see fruit tray page for guidance small veggie tray- 2 ounces per person plus dip, see veggie tray page. However, with the green salad, I might do 3 60 person relish trays instead- top of veggie tray page Desserts, see the dessert planning page
