07/25/11 		You need to cook 20-24 pounds of rice plus all the rest of the ingredients, that is not nearly enough cooking space (only about 30 quarts), as you need to plan for 1 1/2 cups cooked per person.

There are several large chicken and rice recipes in budget cooking, and several of the cajun/creole sites have great quantity recipes, some of which can be done in the oven; but you need much more cooking space.

07/26/11 		You need at least 300 cups, which I think is 10 or more cookers that size. I want to repeat that that is NOT the best cooker for this dish; 18-20 quart electric roasters, which cost about $40 each, hold 60 cups.
