I was wondering if the un-chuck roast could be frozen. In the smaller ammounts that you could get from it. I have frozen gluten steaks in the past with good results. Just wondered if this was any different. Thanks... |

Hi- It freezes great, chunked, sliced, or ground. Enjoy! ellen |

Dear Ellen: Can I make this without the automatic bread machine? How much time kneading are we talking here? thanks, marla |

unchuck roast Hi Marla, You can do it, but it is serious work! We are talking 10-15 minutes of really solid kneading each time, which is about 800 "slaps" if you count the French way. You CAN use the dough hook in your heavy duty mixer or food processor. If you really use unchuck/ seitan, you may want to get a bread machine, or share one with another family. Ellen |

Dear Ellen: I am impressed by your quick response. Thanks! My hubby reminded me that we have a dough hook on our heavy duty mixer and can use that! Who knows, if this works out well, we'll probably be getting that bread machine. We have been making simple seitan with vital gluten which only takes 5 minutes of one hand kneading but want to work more complete protein into it. This looks good. Thanks, marla |

What is an un-chuck roast? Never have heard of it. Sounds very interesting. |

Hi, Janean, It is a grain-baSED meat substitute that can be sliced, stewed, ground etc, basically used in place of meat. It's cheap, and mine has a balanced protein profile. |
