Do I have the right amounts??

Hello! I revamped my menu some... I'm ordering part of my menu from Fazoli's for the pasta dishes and doing the rest... I was wondering if you could help with some of the other amounts..I'm unsure how many dishes of pasta to order from Fazoli's if I'm serving all of the following as well..their menu says the dishes serve 6-8 people, and I was thinking of doing penne w/marinara sauce & penne w/alfredo sauce (instead of spaghetti since it's so messy). Each order/pan of the pasta dish comes with 2 breadsticks per person, but doesn't specify if that is for the 6 or 8 per person suggested...anyway here's what else I'm serving and my guessed amounts of food needed....

Penne w/marinara sauce - 8 pans

Penne w/alfredo sauce - 8 pans

Breadsticks - Those that come w/the pans & an additional 5 dozen??

Cold Cuts - 12 lbs meats, 7 lbs cheese

Buns for sandwiches - 150 buns

Meatballs - 300

Deviled Eggs (216 pieces)

Fruit Trays: (2 pineapples, 4 cantaloupes, 3 watermelons, 3 lbs of grapes & strawberries, 2 lbs kiwi

Veggie Trays: (3 small bags carrots, 4 broccoli, 5 celery, 3 containers of cherry tomatoes) 3 quarts of dip

Cheese Tray: (2.5 lbs of Colby, Cheddar & Swiss, and 1.5 lb of Bleu Cheese (Fiance loves it) & 6 boxes crackers

Sausage Balls: 250 pieces

Mints (3 lb) & Nuts (3 lb) set out on tables

Pasta Salad: 7 lbs

Salad: 20 heads lettuce, 96 oz dressing, 5 lb shredded cheese, 4 lbs croutons

Beverages being soda, water, beer, and coffee:
coffee - unsure?
5 cases of water
15 cases soda
1 keg with a couple cases of other beer

Pasta Salad: 7 lbs OK if that is dry pasta to start, light if that is finished weight. Given the hot pasta dishes, I might do antipasto or marinated veggies (artichoke hearts, beans, etc) instead.

Salad: 20 heads lettuce, 96 oz dressing, 5 lb shredded cheese, 4 lbs croutons OK, but boring., consider adding some garnishes

Beverages being soda, water, beer, and coffee:
coffee - unsure?

15 cases soda- probably too much, if yu have a lot of beer drinkers?
1 keg with a couple cases of other beer OK
don't forget ice, 1 pound per person, or 2 if hot/outside, plus 30-40 pounds per cooler

I forgot my sister-in-law will be making me cheeseballs as well. I'm unsure of how many pounds I need? I also thought I should maybe add a potato salad and macaroni and cheese as well or one of them anyway? Could you tell me how much of each to use?

Cheeseballs: 15 lbs?
Crackers to go with: ??

Potato Salad: 35 lbs potatoes?

Macaroni and cheese: 7lbs dry pasta?

The cheese balls can count as part of the cheese weight, you want 15-20 pounds total for all. No change in crackers.

Potato salad addition is good.

You do NOT need mac and cheese. you are already pasta-loaded.

I go by weights. Use the tables and get the weights, you can figure this yourself.
