It depends somewhat on the menu, who is eating and whether it is self serve or plates. Basically, caterers plan on 5 ounces ready to eat beef (2 pounds raw per 5 people, approximately) PLUS 3 ounces ready to eat chicken meat (which is about 6 ounces bone in) for this mixed service. Most people take both. |
