Hello Ellen ~ I want to sell chicken dinners for my catering company that I have... but I have a dilemna about what parts of the chicken to offer to my customer's. I thought about a half of a chicken, that way I cover the dark meat & white meat lovers! What would you suggest? If I offered single pieces of chicken what parts are most popular and how many should I offer in a dinner? P.S. the dinner would come with 2 sides and a piece of bread and the chicken would be BBQ. Around here, the BBQ places do leg quarters for around $4-5 for that plate, about a dollar more for white quarters, no one except the fried chicken places will do single pieces, except legs on a kid's plate. If you look at your local fried chicken places and watch what they sell you will get a feel for both prices and regional preferences. |
