Hi I'm looking for a great pizza dough recipe, both ingredients & method to prepare dough using a 25# bag of flour as a standard. As I am going to produce 250 to 300 pizzas in a short period. i wilbe using a conveyor type oven. Any response would bo appreciated. Thank you. |

Malted doughs are just made to make the crust more tender and quicker to rise. You can add dough relaxer or 1 tablespoon malted barley flour to each cup of flour in you favorite crust recipe.
