Wedding Reception 250 amounts?

I am so happy to find your site. It is so very helpful. I hope I've done all the research so that you can check my amounts. A number of us do the food for each other kids weddings. We have done this before and know how much work it is and how many helpers we need. We can never quite get the food right, we have way to much or run short on some things. Please help!

Reception is Buffet style with only the meat being servered. 250 guest.

Cheese Fountain - Manned station
Cheese Sauce - 3 cans 107 oz each
Tortia Chips - 9 lb
Assorted Brocc, Cali & Carrots - 10 lb

Kids - Tables
Bowls w/ Goldfish, Pretzells & Animal Crackers

Dinner
Salad - 26 lb
Corn - 11 cans (106oz)
Green Beans W/Bacon - 11 cans (101oz)
Parsley Buttered Potatoes - 14 cans (105oz)
Cranberry Sauce
Butter - 300 ind. pats
Rolls - 360 rolls
Turkey & Gravy - 4 - 22 lb to be deboned
Ham - (not for sand.) 70 lbs

Drinks
Iced Tea
Cherry Limeaide
Coffee Reg. & Decafe

Good effort, and good info on the set up. I would adjust some of the amounts, as I see some shortages if you plan to serve 250:

Cheese Fountain - Manned station
Cheese Sauce - 3 cans 107 oz each- I would allow 1/4 cup (2 ounces) per person = 5 cans
Tortia Chips - 9 lb- I would allow 8 pounds per 100 people- they usually eat about 1 ounce each
Assorted Brocc, Cali & Carrots - 10 lb- I usually allow about 2 ounces per person = 25-30 pounds

Kids - Tables
Bowls w/ Goldfish, Pretzells & Animal Crackers
Grown ups will snack, also, if they can reach them, about 5 pounds per 100 goldfish and pretzels

Dinner
Salad - 26 lb-OK
Corn - 11 cans (106oz)-cutting it close, I usually allow 12-13
Green Beans W/Bacon - 11 cans (101oz) probably OK
Parsley Buttered Potatoes - 14 cans (105oz) probably OK
Cranberry Sauce- 1 can per 8 people
Butter - 300 ind. pats- very short, allow 2 pats minimum
Rolls - 360 rolls- probably OK if they are large, If small and tasty, 2 per person
Turkey & Gravy - 4 - 22 lb to be deboned- VERY short, allow 1/2 pound whole per person bare minimum
Ham - (not for sand.) 70 lbs- may be over- 60 boneless probably plenty
