09/14/11 		cooking for a "cowboy shooting contest". Doing egg & cheese burritos for brkfst. Apprx. 60 people. How to figure eggs? Is 10" tortillas big enough? can I fix nite b 4, warm in oven, the a.m. of and transport to site & keep warm?

The only safe way to pre-make is to freeze, and the plain egg and cheese don't freeze so well. See this recipe for some other ideas:
